How To make Corny Couscous with Dried Cranberries
2 1/4 cups chicken broth
1 tablespoon butter
1/2 teaspoon salt
3/4 cup dried sweetened cranberries
2 cups frozen corn kernels -- thawed
1/2 teaspoon cinnamon
1 10oz box dry couscous
In a medium pot, bring the chicken broth, butter and salt just to a boil. Add the cranberries, corn and cinnamon and stir to combine. Remove from the heat and stir in the couscous. Cover and let sit for 5 minutes. Fluff with a fork and serve.
Per serving: 317 calories, 10 gm protein, 64 gm carbohydrates, 4 gm fat, 5 mg cholesterol, 2 gm saturated fat, 204 mg sodium

INGREDIENTS:
250g dry couscous
1 tsp cumin powder
1/2 tsp smoked paprika powder
1/2 tsp salt or adjust to taste
1/2 tsp ground black pepper
boiling water as needed
1 medium size red onion finely chopped
2 tomatoes finely chopped
2 cucumber diced
2 tbsp lemon juice
1 tbsp tomato paste
3 tbsp olive oil extra virgin (or a generous amount)
1/3 cup coriander finely chopped
1/3 cup parsley finely chopped
a few mint leaves finely chopped
2-3 tbsp of lemon juice (adjust to taste)
DIRECTIONS
Transfer the couscous to a ceramic dish or glass bowl. Then add all seasoning (salt, black pepper, smoked paprika and cumin powder) mix well. Then add hot water (there's no exact measurement for this pour enough so that the couscous is fully covered with water)
Cover the dish for 10 minutes until the water is fully absorbed.
After 10 minutes resting time, add the tomato paste and stir it with a fork breaking up any limps (I find it easier to do it with fingers).
Then add the chopped onion, chopped tomato, cucumber, chopped coriander, parsley, mint leaves, lemon juice and a generous amount of extra virgin olive oil.
At this stage adjust seasoning to taste. Serve at room temperature with grilled chicken skewers!
