Valdostana Chicken is a quick and appetizing dish: it is a sort of scalloppini, but with the addition of ham and cheese, which makes it truly irresistible.
There are an infinite number of variations of Chicken Valdostana; the original one includes fontina, but I added Scamorza or mozzarella and tasty roasted peppers. Perfect for any occasion, this recipe is a must-try for all chicken lovers out there. So join us as we indulge in this perfect combination of flavors!

Ingredients (4 servings):
-4 chicken breast cutlets, approximately 500 g total - 1 lb 1¾ oz
-30 g all-purpose flour - ¼ cup
-1/4 teaspoon sea salt
-1/4 teaspoon freshly ground pepper
-1/4 teaspoon dried oregano
-3-4 tablespoon olive oil
-20 g butter - 1 tbsp plus 2 tsp
-1 clove of garlic, sliced thinly
-80 ml chicken broth - ⅓ cup
-2 tablespoon Marsala or sweet white wine
-4 thin slices prosciutto
-4 slices roasted red bell pepper
-4 tablespoons Parmesan cheese
-4 slices white Scamorza or mozzarella
-Fresh parsley to garnish
INSTRUCTIONS:
Pat chicken dry with paper towels. In a shallow bowl, combine flour, salt, pepper, and oregano. Coat chicken with seasoned flour. Shake off any excess flour. Heat one or two large broiler-safe skillets over medium-high heat. (If you don't have an oven-safe skillet, use a traditional nonstick frying pan and then place the chicken on a baking sheet lined with parchment paper). Add the olive oil and, when it sizzles, add the chicken to the skillet.
Fry until golden brown on both sides. Add butter and garlic to the skillet. Once the butter has melted, and you can smell the garlic, add the broth and Marsala. Reduce heat, cover, and simmer until liquid is reduced, about 8 minutes.
Meanwhile, place the upper oven rack approximately 10 cm (4 inches) below the grill element of your oven. Preheat the grill.
Arrange the chicken on the baking sheet, if you aren't using an oven-safe skillet. Place a slice of prosciutto on each chicken slice. Place a roasted pepper slices on top of the ham. Sprinkle each with Parmesan cheese and top with sliced cheese. Place the skillet or baking sheet under the broiler and cook until the cheese is melted, about 2 to 3 minutes.
Serve the chicken immediately and garnish with fresh parsley.

Cheesy Chicken Recipe (Chicken Valdostana)
John and I are making this northern Italian recipe that consists of chicken cutlets topped with prosciutto and fontina cheese cooked in a tasty wine sauce.
Ingredients:
3 thick Chicken Breasts, sliced in half lengthwise
6 slices of Prosciutto Crudo
12 thick rectangular pieces of Fontina Cheese
2 Tbsp. Butter, unsalted
1/3 cup White Wine (we used Chardonnay)
1/2 cup Chicken Stock
All Purpose Flour
Salt and Black Pepper
Extra Virgin Olive Oil
Directions:
Season flour with salt and black pepper. Cut the chicken breasts lengthwise to create 6 thinner chicken cutlets and season with salt and pepper. Dredge the seasoned chicken cutlets in the flour and set aside.
Add olive oil and one tablespoon of butter to a large frying pan. Once the butter has melted, lower the heat to medium and add in the chicken cutlets. Fry for about 5-6 minutes on each side or until golden brown. Remove the chicken cutlets from the pan and set aside on a clean dish.
In the same frying pan, add the remaining butter and two tablespoons of flour. Whisk until fully combined. Reduce to low heat and pour in the white wine. Whisk together until it has thickened.
Pour in the chicken stock and whisk together until fully mixed. Place the chicken cutlets back into the frying pan. Let them simmer for about 2 minutes.
Place a slice of prosciutto on top of each chicken cutlet (or leave out) and top with two slices of fontina cheese. Cover the pan with a lid and allow to simmer for 5-6 minutes, until the cheese has melted.
