dark brown sugar, firmly packed

red wine vinegar

soy sauce

teaspoon
chicken bouillon, instant
1/2
teaspoon
garlic powder
2
tablespoon
ginger-root, fresh, minced OR 2 tb candied ginger, chopped
1
teaspoon
dried cilantro
1
rice, cooked, hot
Directions:
For crockpot cooking: Put vegetables in bottom of crockpot. Sprinkle tapioca over vegetables. Place chicken on top of vegetables. Combine all other ingredients except rice in a small bowl. Pour over chicken. Cover crockpot and turn to low and cook for 8-10 hours. Before serving make rice. Serve over rice. Leftovers can be reheated in microwave.
To cook in oven: Put vegetables in bottom of a greased pan. Sprinkle vegetables with tapioca. Add chicken to pan. Combine all other ingredients except rice in a small bowl. Pour over chicken. Cover pan tightly with foil. Bake in 300 degree oven for 2 hours. Serve over rice. Leftovers can be reheated in microwave.

A great way to make Sweet and Sour Chicken - a classic family favorite. This recipe makes enough for at least 8 people and comes out to less than $5 a person!
Recipe:
700 grams / 1.5lbs of chicken breasts
2 carrots
1 red bell pepper
1 green pepper
1 onion
440 gram can of pineapple chunks
Sauce:
1/4 cup apple cider vinegar
1.5 tbsp of soy sauce
2 cloves of garlic
3 heaped tbsp of brown sugar
1/3 cup of pineapple juice
To thicken:
2 tbsp or corn flour / corn starch in 1/3 cup of cold water
Cook for 8 hours on low or 4 hours on high. Serve over rice

You can eat this dish just on its own without any extras but if you’re wanting to bulk it out then rice is always a good side. If you’re going to cook rice, then make sure you do it over the stove or in an automated device such as a rice cooker.

• 500g (1.5 lb) Chicken, cubed
• 1x 440g (15 ½ Oz) can, Pineapple Pieces with unsweetened juice (Don’t drain)
• 1 Large Red bell pepper, chopped
• 1 onion, quartered
• 1 Carrot peeled & sliced
• ½ tsp. ginger
• 3 Tbsp. brown sugar
• 4 Tbsp. ketchup
• 2 Tbsp. soy sauce
• ¼ cup apple cider vinegar
To thicken.
• 2 Tbsp. cornstarch
• 2 Tbsp. Water
Depending on what you prefer you can swap the chicken thigh out for chicken breast.
You’re able to use tomato paste or tomato sauce instead of the ketchup. This is incredibly handy if you find yourself living in an area where ketchup is unavailable to buy.
One great thing that I love about this dish is how well it will reheat so make sure you don’t throw out the leftovers. It should keep for a few days in the fridge.
The soy in this dish usually provides enough salt that you don’t have to season it further. If you’re worried about it not being seasoned enough then simply taste and adjust at the end of cooking.

Slow Cooker Sweet & Sour Chicken:
Ingredients:
5-6 boneless skinless chicken breasts
Kikkoman Sweet and Sour Sauce 12 oz
Pineapple Chunks in 100% Juice 20 oz
2 Bell Peppers
1 White Onion
Directions:
Place chicken breasts in the crock pot and pour the juice ONLY from the pineapple can over the chicken. Cover and cook on LOW for 6 hours. After 6 hours on LOW drain the juices from the crock pot. Take out the chicken breasts and dice into chunks. In a separate bowl mix the onion/bell peppers (cut into 1 inch pieces) and the sweet & sour sauce. Pour on top of the chicken in the crock pot. Mix the veggie mixture with the chicken, but don't mix too much to break up your chicken. Put the lid on and cook on HIGH for 1 hour. Cook longer if you don't like any crunch to your veggies. Serve with sides & enjoy!!

SWEET AND SOUR CHICKEN SLOW COOKER FREEZER MEAL!!
Today I am sharing a freezer meal that you can prepare and make in either your slow cooker or pressure cooker. This makes it super simple to plan your weekly menus and get good home cooked meals on the table. It also helps you budget. Not to mention make delicious food your family will love! Today we are sharing a sweet and sour chicken that can be made up and frozen in a zip lock bag then popped in your slow cooker either frozen or thawed and cooked all day. You can also thaw this during the day and pop it in your pressure cooker when you get home. Steam some rice and a fresh veggie and dinner is served!
This sweet and sour chicken is fresh, delicious and nutritious. Packed with all those delicious flavors from your favorite Chinese restaurant without the cost or the extra calories because this recipe is not fried. This is a super easy way to make a freezer meal that will satisfy! These can be made by the single recipe when menu planning or you can make three or more at one time. That way you always have them on hand for quick meal selection.
This starts with some boneless skinless chicken breast or thigh meat, then the usual suspects for sweet and sour chicken. onions, celery, bell peppers and carrots. I did not have any carrots on hand today so we skipped them. You can add to or take away what you like or don't like. Then the magic is in the sauce! Ketchup, water, vinegar, garlic, lemon grass paste, ginger paste, soy sauce, sugar, brown sugar and corn starch are mixed together and then poured over the meat and veggies in a gallon freezer bag. I am using my reusable ones. NOTE:, please be sure to seal them well or you will end up with a mess like I did.
This can be frozen flat or if you like you can pop it in a loaf pan and freeze it then it will be easier to pop into your slow cooker. You can also divide this up into two separate bags if that makes things easier. Remember Label, label, label!!
I have provided all of the cooking instructions for both slow cooker and pressure cooker as well as from frozen or thawed. This makes for a super easy meal with some steamed rice or even noodles. We love to have roasted broccoli with this as well. You can never really have too many veggies on your plate!

Crock Pot Sweet and Sour Chicken
1-1.5 pounds chicken
Desired salt and pepper
8 oz can pineapple chunks
8 oz sliced water chestnuts, drained
1 cup chopped carrots
2 tablespoons soy sauce
4 tablespoons cornstarch
1 cup sweet and sour sauce
1/4 cup water
1 teaspoon ground ginger
1.5 cups fresh sugar snapped peas
Add chicken, salt, pepper, water chestnuts, carrots, soy sauce,
water, ginger, cornstarch, and sweet and sour sauce into crockpot.
Cover and cook on low for 4-5 hours. Add un-drained pineapple
and peas. Cook at least another 30-60 mins or until peas are cooked to
your liking. Serve over cooked rice. Enjoy.
