Vegan Caesar W/ Mushroom BACON & CHICKPEA CROUTONS
Vegan Caesar Salad 2.0
INGREDIENTS
4 cups chopped lacinato kale
1 cup chopped romaine lettuce
1 cup chopped vegan bacon (
2 tbsp hemp seeds
Roasted Chickpeas
2 cups cooked chickpeas rinsed
4 tbsp coconut aminos
¼ tsp garlic granules
½ tsp smoked paprika
Caesar Dressing (See my reels)
1/2 cup raw cashews (soaked for min. 2 hours)
1/4 cup + 3 tablespoons water
2 tbsp lemon juice
2 tbsp nutritional yeast
1/4 tsp dulse flakes
2 cloves garlic
1 pitted medjool date
1/4 tsp pepper
1 tsp salt or TO YOUR TASTE
1/2 tsp parsley
INSTRUCTIONS
Prepare the dressing by combining all the ingredients in a high-speed blender and blend until smooth.
Roast chickpeas by spreading rinsed chickpeas on a baking sheet. Bake at 400F for 15 minutes. Remove from the oven and add coconut aminos and seasons, mix. Continue to bake for an additional 10 minutes or until chickpeas are dry and a little sticky. They will become more crunchy as they cool.
Combine greens for the salad, add some dressing and toss. Top with chopped mushroom bacon, chickpeas, hemp hearts, and extra dressing. Enjoy!

Ingredients -
For The Chicken -
2 tsp (10ml) - Olive Oil For Chicken Seasoning
8 - Large Chicken Thigh, Boneless & Skinless
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
1/2 tsp (1g) - Dried Thyme
1/2 tsp (1g) - Dried Oregano
Salt & Pepper
1 Tbsp (20ml) - Olive Oil For Cooking Chicken
Creamy Garlic Mushroom Sauce -
1 Tbsp (14g) - Unsalted Butter
2 - Shallots, Finely Diced
300g (10.5oz) - Swiss Brown Mushrooms
100ml (100g) - Dry White Wine
6 - Garlic Cloves, Minced
1g (0.03oz) - Fresh Tarragon
3g (0.1oz) - Fresh Parsley
300g (10.5oz) - Thickened Cream
50g (1.7oz) - Parmigiano Reggiano, Freshly Grated
Instructions -
1. Add chicken, olive oil, onion powder, garlic powder, dried thyme, dried oregano, and salt and pepper in a bowl. Mix well and set aside.
2. Add the remaining olive oil to a large pan over medium-high heat and sear the seasoned chicken in batches for 6 minutes on each side or until deeply golden and cooked through. Remove, set aside and repeat with the remaining batch.
3. Add the unsalted butter and shallot and cook for 1 minute. Add in the mushrooms and salt to taste and sauté for 6 minutes. Add the garlic and sauté for 45 seconds to 1 minute, mixing the whole time. Deglaze with the wine or chicken stock and cook for 1 1/2 minutes or until reduced by half.
4. Add in the cream, mix well and bring to a simmer; reduce the heat to medium-low and cook for 5-6 minutes or until thickened. Add the parmesan cheese, flat-leaf parsley, tarragon and seasoning to taste. Mix to combine. Add the chicken back into the sauce with the resting juices and coat the chicken well. Cook for 1 minute. Remove from the stovetop.
5. Serve in bowls or plates and garnish with flat-leaf parsley, cracked black pepper and parmesan cheese. Dig in.
Recipe Notes -
I used chicken stock as I needed to use up ingredients but white wine can be used as a replacement.
This dish is best eaten fresh as cream based sauce can potentially split upon reheating. If you did wish to store it, it will last 2 days in the fridge. I don’t recommend freezing it.
This recipe is amazing on its own but can also be served with all of your favourite sides such as mashed potato, pasta, rice and a wide range of different vegetables.
The fresh herbs are optional as well as the parmesan cheese but add incredible flavour. If you can’t source fresh herbs they can be substituted for their dried counterparts. Use 1 tsp of dried parsley and 1/4 tsp of dried tarragon. The tarragon can easily overpower the dish if used too much. You can always add but can’t take out so adjust to your liking.
Cream alternatives will no longer make this dish the amazing recipe that it is. Without cream, you’ll need to add flour as a thickening agent which will ruin the texture of the sauce.

This one pot baked chickpea recipe is a healthy and easy Vegetarian and Vegan Meals Idea. These chickpea recipes are perfect one pot meal for any day of the week.

▶️ CHICKPEA RECIPE INGREDIENTS: (3 to 4 servings approx.)
2 cups / 1 can (540ml can) Cooked Chickpeas - drained and rinsed
100g / 1 cup Carrots - Julienne cut
(It's important that the carrots are thinly shredded so that they can cook in the same time as the onions)
250g / 2 heaping cup Red Onions - thinly sliced
200g / 1 heaping cup RIPE Tomatoes - chopped
35g / 1 Jalapeno OR Green chillies to taste - chopped
2 Tablespoon Garlic - finely chopped
2+1/2 Tablespoon Tomato Paste
1/2 Teaspoon Ground Cumin
1/2 Teaspoon Ground Coriander
1 Tablespoon Paprika (NOT SMOKED)
Salt to taste ( I have added total 1+1/4 Teaspoon of pink Himalayan salt)
3 Tablespoon Olive Oil
???? Garnish:
1/4 cup / 10g Parsley - chopped
Freshly Ground Black Pepper to taste (i have added 1/4 teaspoon)
OPTIONAL - Drizzle of extra virgin olive oil
✅ ???? BAKING PAN: 10.5 X 7.5 inches (you could use a square or oval shaped pan as well)
▶️ METHOD:
Thinly slice the onion and julienne cut the carrots. IT'S REALLY IMPORTANT THAT THE CARROTS ARE THINLY SHREDDED SO THAT IT CAN BAKE / COOK IN THE SAME TIME AS THE ONIONS. Chop the jalapeno or green chilis and garlic. Set it aside. Now drain 2 cups of home cooked chickpeas or 1 can of cooked chickpeas and rinse it.
PRE-HEAT THE OVEN TO 400 F.
To a 10.5 X 7.5 inches baking pan add the cooked chickpeas, shredded carrots, onions, tomatoes, jalapeno, garlic, tomato paste, spices (ground cumin, coriander, paprika) and salt. Mix thoroughly with clean hands, so that each of the vegetables and chickpeas are coated with the spices and tomato paste.
Wet a rectangular piece of parchment paper so that it becomes more pliable and easier to cover the pan. Squeeze to remove any excess water. Cover the pan with the wet parchment paper as shown in the video.
Then Bake in a pre-heated oven at 400F for about 35 minutes or until the carrots and onions are soft and cooked. Remove from the oven and then remove the parchment paper. Bake uncovered for about another 8 to 10 minutes to get rid of any excess water. It took me 10 minutes in my oven.
✅ ???? EVERY OVEN IS DIFFERENT SO ADJUST THE BAKING TIME ACCORDING TO YOUR OVEN.
Remove the pan from the oven and place it on a wire rack. Allow it to slightly cool down. This is a very versatile dish. You can serve it with couscous or rice. Make a greek pita pocket sandwich or serve it along with whole wheat roti or pita.
This recipe is perfect for meal planning / meal prep and can per stored in the refrigerator in an airtight container for up to 3 days.

Ingredients:
400ml canned chickpeas
3 large king oyster mushrooms
1 tsp smoked paprika
1 tsp sweet paprika
1/2 tsp cayenne pepper
pinch of salt
2 tbsp avocado oil
3 pieces garlic
2 cups basmati rice
3 tbsp chili oil (
1 tbsp tomato paste
2 cups water
2 tbsp soy sauce
1 tsp dark soy sauce
1 tsp toasted sesame oil
1 tsp Chinese black vinegar
1 tbsp maple syrup
14g fresh Thai basil
Directions:
1. Pre-heat the oven to 400F. Drain and rinse the chickpeas. Then, line a mixing bowl with some paper towel and add in the chickpeas. Toss to dry the chickpeas, then remove the paper towels
2. Chop the king oyster mushrooms into cubes slightly larger than the size of a chickpea. This way, they will cook together evenly. Add the mushrooms to the chickpeas
3. Add the smoked paprika, sweet paprika, cayenne pepper, generous pinch of salt, and avocado oil. Toss to combine. Then, spread onto a baking tray lined with parchment paper
4. Finely chop the garlic. Use a sieve to rinse and drain the rice, then set aside
5. Heat up a sauté pan to medium low heat. Add the chili oil followed by the garlic. Stir and cook for about 1min. Add the tomato paste and cook for another minute. Add the rice. Turn the heat up to medium high and give the pan a stir
6. Add the water, give the pan a quick stir, then do not disturb any further. When the water begins to bubble, allow the rice to bubble away for about a minute or so. Then, cover and cook on medium low for 15min
7. Place the chickpeas and mushrooms into the oven and bake for 20-25min
8. Mix and combine the soy sauce, dark soy sauce, toasted sesame oil, Chinese black vinegar, and maple syrup. Chop the fresh Thai basil and set aside
9. After 15min, turn the heat off and let the rice steam further for 10min
10. Plate the rice and spoon over some of the sauce. Top with some of the roasted chickpeas and mushrooms. Sprinkle over some of the chopped Thai basil and serve!
