How To make Chick Pea & Mushroom Bake
112 1/2 g Chick peas (dried) or 300 g Chick peas (canned)
7 1/2 ml Lemon juice
Ground Black Pepper 2 1/2 ml Sunflower Oil
125 g Mushrooms
12 1/2 g Sunflower margerine
12 1/2 g Wholemeal flour
150 ml Water
12 1/2 g Soy cheese
12 1/2 g Breadcrumbs
Notes: Either Butter Beans or Chick Peas can be used in this recipe. Preparation: Slice the mushrooms and grate the cheese. Soak the dried chickp peas/butter beans as instructed on the packet. Drain, and cook in a pan of unsalted boiling water fgor 40-50 minutes or until tender. If using canned beans, just drain. 1. Put the beans in a large greased ovenproof dish. 2. Add the lemon juice
and black pepper. 3. Heat the oil in a pan and fry the mushrooms, then add to the dish. 4. Heat the margerine in a non-stick saucepan and add the flour. 5. Cook for 2 minutes over a low heat, stirring, then slowly add the water to make a puring sauce. 6. Pour over the chick peas/butter beans and mushrooms. 7. Sprinkle with cheese and breadcrumbs. 8. Cook in the oven at 180C/350F/GM4 for 25 minutes.

Vegan Caesar W/ Mushroom BACON & CHICKPEA CROUTONS
Vegan Caesar Salad 2.0
INGREDIENTS
4 cups chopped lacinato kale
1 cup chopped romaine lettuce
1 cup chopped vegan bacon (
2 tbsp hemp seeds
Roasted Chickpeas
2 cups cooked chickpeas rinsed
4 tbsp coconut aminos
¼ tsp garlic granules
½ tsp smoked paprika
Caesar Dressing (See my reels)
1/2 cup raw cashews (soaked for min. 2 hours)
1/4 cup + 3 tablespoons water
2 tbsp lemon juice
2 tbsp nutritional yeast
1/4 tsp dulse flakes
2 cloves garlic
1 pitted medjool date
1/4 tsp pepper
1 tsp salt or TO YOUR TASTE
1/2 tsp parsley
INSTRUCTIONS
Prepare the dressing by combining all the ingredients in a high-speed blender and blend until smooth.
Roast chickpeas by spreading rinsed chickpeas on a baking sheet. Bake at 400F for 15 minutes. Remove from the oven and add coconut aminos and seasons, mix. Continue to bake for an additional 10 minutes or until chickpeas are dry and a little sticky. They will become more crunchy as they cool.
Combine greens for the salad, add some dressing and toss. Top with chopped mushroom bacon, chickpeas, hemp hearts, and extra dressing. Enjoy!
Chickpea Curry - 5 Minute Dinner

INGREDIENTS
½ red onion
2 tablespoons olive oil
1 clove of garlic
½ thumb-sized piece of ginger
½ a red chili (if you like it spice like Dave, leave the seeds in!)
1 tbsp curry powder
1 tsp cumin powder
1 tsp ground coriander
1 tsp ground paprika
1 400g tin chopped tomatoes
1 400g tin coconut milk
1 400g tin of chickpeas (drained and rinsed
1 tsp salt
½ tsp ground black pepper
small bunch of coriander
zest of ½ lime
juice of ½ lime
1 avocado
INSTRUCTIONS
-Heat the oil on a medium heat.
-Thinly slice the onion and garlic and add to the pan.
-Grate the ginger into the pan. No need to remove the skin!
-Thinly slice the chilli and add to the pan.
-Add the spices and cook for 30 seconds.
-Add the chopped tomatoes, coconut milk and chickpeas.
-Add the salt and pepper.
-Chop the coriander and add to the pan along with the lime zest.
-Add the lime juice, season to taste and serve with avocado and the grain of your choice. Lovely!

This chickpea chicken sandwich is out of this world!! I love making Chickun using chickpeas but making this pounded buttermilk chicken on a vegan butter milk maple butter biscuit made was awesome! I had these biscuits for days after because OMG they are so good.
