Super delicious No Bake Cookies made with oats, peanut butter, and chocolate. These cookies are unbelievably easy to make and have the most delicious fudgy and chewy texture. They come together in just about 2 minutes!

We love making no bake cookies at our house; they're packed with chocolate peanut butter flavor and make perfect snacks. You might remember I made a video for these way back before the new kitchen was finished. I've since updated the recipe over time and so thought it would be fun to make a new video!

How to make Trail mix and oatmeal cookies - healthy breakfast oatmeal trail mix cookies recipe
This oatmeal cookie recipe make cookies are soft in the middle, a little chewy on the outside and full of warm flavors like cinnamon and vanilla. The oatmeal cookies are very easy to make and you don't need any fancy equipment -- only a hand mixer.
Ingredients
1 cup or 125 gms Maida
1 cup or 100 gms Oats
1 cup or 100 gms Brown Sugar
½ cup or 110 gms butter
1 teaspoon baking powder
60 ml Honey
1/4th teaspoon baking soda
1 teaspoon Vanilla extract
50 gms Raisins

✨Ingredients✨
⅓ cup + 2 Tbsp (105 g) soft butter
⅓ cup + 2 Tbsp (70 g) brown sugar
⅓ cup (70 g) granulated sugar
3½ Tbsp (55 g) unsweetened applesauce
2 tsp (5 g) ground flaxseeds
1 tsp ground cinnamon
1 tsp vanilla
½ tsp (2 g) baking powder
½ tsp (3 g) baking soda
¼ tsp (2 g) salt
1⅓ cups (185 g) whole wheat flour
1⅓ cups (110 g) rolled oats
¾ cup + 3 Tbsp (70 g) unsweetened shredded coconut
⅔ cup (70 g) raw pecans, coarsely chopped
½ cup (100 g) chocolate chunks or chips
????????Instructions:
????Preheat oven to 355°F (180°C). MODE: Upper and Lower heat. Line a baking tray with parchment paper.
✅Add the soft butter, brown sugar, and granulated sugar to a large bowl, and cream using a spatula.
✅Add the applesauce, flaxseeds, cinnamon, vanilla and salt. Stir again, until everything is well combined.
✅Add the flour, baking powder, baking soda, oats, and coconut flakes, and gently fold together with a spoon or with your hands.
✅Just before the mixture is completely combined, gently fold in the pecans, and chocolate chips. Stir again until just combined
✅For each cookie, use a ¼ cup measure to scoop the amount of dough into your hands. Use your hands to form a ball, and then flatten the ball to create a cookie shape that's about 1½ cm thick. These cookies don't spread when cooking, so they need to press them down into the desired shape.
✅Place the cookies on a parchment-lined baking tray leaving about 2 cm space between each cookie.
✅Press some chocolate chips or chopped pecans onto the top of each cookie before baking.
????Bake in the centre rack of the oven for 13 - 15 minutes, or until lightly golden.
✅Let the cookies rest for 5 minutes on the baking tray to harden, then transfer to a wire rack to cool completely. Enjoy!

1/4 cup coconut oil liquid but not hot

3/4 cup old-fashioned rolled oats made into oat flour
1/2 cup dried cranberries
1/2 cup chopped pecans
1/4 cup ground flaxseed
1/2 tsp cardamom
1/4 tsp sea salt
Midnight Cookies 4:11
3/4 cups old fashioned rolled oats made into oat flour
1 cup old fashioned rolled oats
1/2 cup chopped cashews
1/2 cup sesame seeds
1/4 tsp sea salt

Trail Mix Cookies are simple and easy to make!
Trail Mix Cookies are simple and easy to make. Everybody loves a good trail mix snack and these Trail Mix Cookies are simply delicious. Sunflower seeds, cashews, almonds, raisins, and M&M candies were used in this recipe however feel free to create your own/favorite trail mix blend when creating these cookies. Rolled oats and coconut flakes were added in this recipe to enhance the flavor and texture of this cookie. These cookies only took twelve minutes in the oven (oven vary). I particularly enjoy these cookies as an afternoon snack and they can be enjoyed anytime of day. I encourage you to head to the kitchen, its your turn to make these amazing Trail Mix Cookies, and remember; you got this!
Here is the recipe:
28g 2 tbsp. sunflower seeds (raw or toasted)
42g/ 3 tbsp. unsweetened coconut flakes
30g/ 1/3 cup. almonds
36g/ 1/2 cup rolled oats
46g/ 1/3 cup chopped cashews
52g/ 1/3 cup raisins
67g/ 1/3 cup plain M&M candies
188g/ 1.5 cups all-purpose flour
100g/ ½ cup granulated sugar
97g/½ cup brown sugar
2g/ ½ tsp baking powder
2g/ ½ tsp baking soda
1g/ ¼ tsp salt
4g/ 1 tsp vanilla
113g/ 8 tbsp. unsalted butter (room temp)
57g/ 1 egg
Preheat oven to 350F/176C
In a separate bowl, make the trail mix by combining sunflower seeds, cashews, almonds, M&Ms, and raisins and set aside.
In a medium bowl combine flour, coconut flakes, salt, baking soda and baking powder then set aside.
In a large bowl, combine cream butter, sugars, and vanilla until smooth and creamy
Add egg and combine.
Combine wet and dry ingredients until just combined
Add rolled oats and combine
Fold in trail mix
Chill dough for 15 mins
Transfer/scoop cookies onto a baking tray lined with parchment paper
Place cookies 2 inches apart
Press cookies down slightly
Bake @ 350F/ 176C for 12-15 minutes (ovens vary)
Allow to cool and serve
Recipe makes 12 large cookies.
