I honestly prefer Oatmeal cookies over chocolate chip cookies. Generally, they are more chewy and less dry. So. in this video, I had the mission to find the perfect oatmeal cookie recipe and I think I succeeded. You can find description of all the other, not winner cookies.
Ingredients – Oatmeal Cookies (about 15 cookies)
175 g brown sugar (0.35 €)
1 egg (0.16 €)
115g vegetable oil (0.16 €)
1 pkt vanilla sugar
140 g flour (0.05 €)
1.5 tsp baking powder
0.5 tsp salt
115g rolled oats (0.11 €)
Chocolate chips, walnuts, … (0.49 €)
= 1.32 € in total
Tipps & Tricks:
I already tried whether letting the cookies sit for some time would make a difference. After 24 hours I honestly couldn’t really taste anything different, and the texture was also the same. So, I wouldn’t bother with this.
If you want to eat the cookie dough raw, make it with brown butter. It honestly makes it sooooo much better. Sadly, in my opinion, this awesomeness got lost during the cooking process.
I originally expected that I would like the cookies with milk more because I really like chewy cookies. But the milk only made the cookie taste soggy. I would only use milk with the brown butter. Here the milk only replaces the fluids that evaporated during the boiling process.
The cookies with white sugar were a bit crunchier but also dryer and had less taste than the ones with brown sugar. However, the difference wasn’t huge so if you’re on a tight budget, just make it with white sugar.
I liked the cookies with simple butter the least. They were just dry in my opinion.
The ones with margarine were pretty similar to the ones with oil. They were just a bit drier and less chewy.

Vegan Oat Cookies Healthy | Easy Gluten-Free Trail-Mix Cookie Recipes | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
• 1 cup (100g) ROLLED OATS
• 1/2 cup (55g) ALMOND FLOUR (ground almonds)
• 1/4 cup (25g) GROUND FLAX SEEDS
• 1 tbsp (12g) CHIA SEEDS
• 1 tsp (5g) BAKING POWDER
• 1 tsp (3g) GROUND CINNAMON
• 1/4 cup (70g) MASHED BANANAS (1 large)
• 1/4 cup (80g) MAPLE SYRUP
• 1/4 cup (60ml) ALMOND MILK
• 1/4 cup (60ml) COCONUT OIL
• 1/2 cup (65g) DRIED CRANBERRIES (no sugar added)
• 1/4 cup (35g) SUNFLOWER SEEDS
• 1/4 cup (40g) PUMPKIN SEEDS
• 1 tbsp (10g) BLACK SESAME SEEDS (optional)
• 1/4 cup (15g) UNSWEETENED SHREDDED COCONUT FLAKES (desiccated coconut)
HOW TO MAKE IT:
1. Whisk together the first 6 ingredients
2. Whisk together the next 4 wet ingredients then add the dried cranberries; to soak up some of the liquid
3. Pour the wet into the dry and fold to incorporate. Fold in sunflower seeds, pumpkin seeds, black sesame seeds and shredded coconuts until well combined
4. Lined your pot/pan/cookie sheets. Shaped your cookies into whatever size you like. I'm using a 1 tablespoon size for my cookies
5. Bake in the rice cooker for 1 bake cycle (30 min). There is no raw ingredients to cook through; just need to bind together
AIR-FRYER BAKING:
Bake in 375F (190C) for 5 minutes then turn the cookies over and bake another 4 minutes. Yours may need more or less time. Just keep an eye on it or it will burn quick
OVEN BAKING:
Bake in pre-heated oven of 325F (160C) for about 15-20 minutes. Ovens varied so check after 18 minutes and bake a little longer as needed

Oatmeal Trail Mix Cookies
Healthier oatmeal cookies that are soft and chewy, sweetened with honey, and filled with your favorite trail mix. A wholesome and delicious treat for lunchboxes, snacking, or dessert.

Ingredients
• 1/2 cup unsalted butter softened
• 1/2 cup light brown sugar make sure it's fresh and soft
• 1/4 cup honey
• 1 egg
• 1 teaspoon vanilla
• 1 1/4 cups Bob's Red Mill Old Fashioned Rolled Oats
• 3/4 cup white whole wheat flour
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• 1/2 teaspoon ground cinnamon
• 1 1/2 cups roughly chopped trail mix divided (see note)
Instructions
1. With a hand mixer or stand mixer, beat butter, brown sugar and honey for 2-3 minutes, until smooth and creamy. Add egg and vanilla and beat to combine.
2. In a separate bowl, combine oats, flour, baking powder, salt and cinnamon. Add the dry ingredients to the wet ingredients and mix until combined. Stir in 1 cup of trail mix by hand. Cover the dough and refrigerate for two hours or up to overnight (you can skip this step and bake immediately, but I prefer the final texture after chilling).
3. Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone liners. Scoop the dough into two tablespoon balls and place a couple inches apart on the baking sheets. Use the remaining ½ cup trail mix to press some pieces onto the top of each dough ball (this makes the trail mix more visible and makes for a prettier cookie). Lightly press down on the dough balls to flatten just slightly. Bake for 9-11 minutes (see note), until the edges of the cookies are done and the very center is still slightly underdone. Do not over bake, as they will finish cooking on the baking sheet. Place the baking sheets on wire racks and allow the cookies to cool completely.
Notes
Trail mix: You can use a store bought variety or you can make your own by combining nuts, seeds, dried fruit and/or chocolate chips. The combination I like best for these cookies is a mixture of pecans, walnuts, almonds, pepitas, dried cranberries, raisins, and chocolate chips.Bake time: If using less than 2 tablespoon dough balls, lower baking time by a couple of minutes. The center of the cookies should look slightly underdone when you pull them from the oven.

These trail mix cookies are the ultimate snacking companion with the perfect balance of sweetness & crunch in every bite. Happilo’s Nut Mix, Happilo’s Blueberry Cranberry Duet & Happilo’s Pumpkin seeds make for the perfect trail mix for this recipe.
To make this recipe, you need:-
Ingredients
-220gms butter, softened,
-1/2 cup granulated sugar
-1/2 cup brown sugar
-1 large egg
-1 tsp vanilla extract
-1 1/3 cups all-purpose flour
-1/2 tsp baking soda
-1/2 tsp ground cinnamon
-2 cups old-fashioned rolled oats
-1 cup Happilo Nut mix
-1/4 cup Blueberry Cranberry Duet
-1/4 cup Pumpkin Seeds
Instructions:-
-Preheat to 180°. Line a cookie sheet with parchment paper then set aside.
Cream butter and both sugars together until light and fluffy.
-Add the egg and vanilla and beat until everything is completely incorporated.
-Sift the flour, baking soda and cinnamon over the wet ingredients and mix just until combined.
-Add the rolled oats and 1 cup of Happilo Nut mix, Happilo blueberry cranberry duet & Happilo pumpkin seeds and mix until completely incorporated.
-Refrigerate the batter for at least 30 minutes.
-Now scoop out the cookie dough on a baking sheet using an ice-cream scooper. Decorate the tops with some more Nut mix
-Bake for 12-15 minutes or until the edges start to brown.
Remove from the oven and transfer them to a wire rack to cool completely.
Optional - You can even a handful of chocolate chips to the batter.
