How To make Chewy Coconut Bars
1/2 c egg substitute or 2 eggs
1 c sugar or sugar substitute equal to 1 cup
1/4 tsp maple flavoring
1/2 c margarine
melted
1 tsp vanilla
1/2 c baking powder
1/4 tsp salt
1 c unsweetened coconut :
finely chopped
1/2 c walnuts -- chopped
1/2 c raisins
Preheat oven to 350 degrees F. Beat egg substitute, sugar substitute and maple flavoring in a medium bowl; mix in margarine and vanilla. Combine flour, baking powder and salt in small bowl; stir into egg mixture. Mix in coconut, walnuts and raisins. Spread evenly in greased 8-inch square baking pan. Bake until browned and toothpick inserted in center comes out clean, about 20 minutes. Cool on a wire rack; cut into squares.

1 1/2 cups crushed graham crackers
1/2 cup melted butter
1 can (14oz) sweetened condensed milk
2 cups semi sweet chocolate chips
1 1/2 cups flaked coconut
1 cup chopped nuts ( I used pecans)
- preheat oven to 350
Coat 13x9 baking pan with Pam
Combine butter with graham crackers and press firmly into pan
Mix chocolate chips, coconut and nuts in a bowl and then pour over graham cracker crust and press firmly
Pour sweetened condensed milk over the top
Bake at 350 for 25-30 minutes until lightly browned
Set on wire rack and loosen around the edges while still warm.
