This is the perfect batch of homemade chocolate chip granola bars. They're the ideal portable snack that strikes a balance between sweet and salty. But most importantly - they nail that chewy texture we all know and love in a classic granola bar.
You know I always look for ways to give a healthy, homemade spin to packaged foods. So today, it was about time I made my own chewy chocolate granola bar recipe! And one that's naturally gluten-free (of course). These healthy granola bars are the perfect snack idea for the afternoon munchies or back-to-school lunch boxes. Enjoy!

How to make a super moist and chewy Caramel Bars.
Here's what you'll need:
1 cup butter (227g Unsalted)
1 cup light brown sugar (200g)
4 egg yolks and 1 whole egg (room temperature)
1 can condensed milk
2 cups all purpose flour (250g) Typo error in the video not 375g
1 cup powdered milk (120g)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup chopped cashew nuts

Homemade Chewy Granola Bars 4 Ways

Here is what you'll need!
CHEWY GRANOLA BARS
Makes: 4
INGREDIENTS
2½ cups old-fashioned oats
2½ cups rice cereal
½ cup brown sugar
½ cup coconut oil
½ cup honey
½ teaspoon salt
½ teaspoon vanilla
Chocolate Chip
½ cup chocolate chips
Apple Cinnamon
½ cup dried apples
1 teaspoon cinnamon
¼ teaspoon nutmeg
Cherry Almond
½ cup sliced almonds
½ cup dried cherries
Peanut Butter Crunch
½ cup peanut butter
½ cup pretzels, crushed
½ cup chocolate candies
PREPARATION
1. In a large mixing bowl, combine the oats, rice cereal, coconut oil, honey, brown sugar, salt, and vanilla until evenly mixed.
2. For chocolate chip, take ¼ of the oats mix and combine with chocolate chips.
3. Stir until mixed and move the mixture to a small baking dish.
4. For Apple Cinnamon, take ¼ of the oats mix and combine with dried apples, cinnamon, and nutmeg. Stir until mixed and move the mixture to a small baking dish.
5. For Cherry Almond, take ¼ of the oats mix and combine with almonds and cherries. Stir until mixed and move the mixture to a small baking dish.
6. For Peanut Butter Crunch, take ¼ of the oats mix and combine with pretzels, peanut butter, and chocolate candies. Stir until mixed and move the mixture to a small baking dish.
7. Bake each bar mixture at 350°F/175°C for 5-8 minutes.
8. Let granola cool and then cut into desired bar shape.
9. Enjoy!

Food for the Gods | Chewy Dates and Walnut Bars
Also known as date bar is a rich and buttery pastry treat prepared with dates & walnuts.
Ingredients:
1 cup all-purpose flour
1/4 tsp salt
1tsp baking powder
1 cup pitted dates, chopped
1 stick unsalted butter, melted
1 cup brown sugar
2/e cup sugar (white)
1 tbsp honey/light molasses
1/2 tsp vanilla extract
2 eggs
1 1/2 cups walnuts (coarsely chopped)
Procedure:
1. Preheat oven to 350 F and place rack in the upper middle position. Line a 9”x13” baking sheet with parchment paper and set aside.
2. Sift all-purpose flour, salt and baking powder in a small bowl. Put half this mixture in another bowl and dredge the chopped dates in there.
3. Combine melted butter, brown sugar, sugar, eggs and vanilla in a large bowl. Mix until batter is uniform. Add honey and mix.
4. Fold flour into the batter using a rubber spatula. Lastly, fold the dredge dates and walnuts.
5. Pour the batter to the prepared pan and spread evenly. Pour the mixture to the prepared pan. Spread evenly. Bake in the oven for 35 to 40 minutes when using a 9”x 13” pan, and 15 minutes when cooked in a jelly roll pan. It should be done when you poke a toothpick through the middle and it comes out clean. The center would still be wet.
6. Cool completely before slicing into bars. Cool in the fridge for better slice ability.
Notes:
Baking pan: I always use a 9”x13” pan and the thickness of the bar is just perfect.
Dates: DO NOT use the pre-chopped new that come in boxes because they are coated in sugar and will make your bars too sweet. It is tedious to chop 1 cup of dates. but it will be worth it!
