It has been a while since I have cooked because of me taking chemo. I just haven't been able to stand the smell of food. However, I am feeling much better and wanted to cook something for you before I take another treatment next week. This recipe was sent to me by one of my followers, Connie Jo Essary. We love sausage balls and I knew these should taste very similar. After making them I will tell you that they are DELICIOUS. The great part is that you can freeze and then take one out and put it in the microwave whenever you would like one. I feel sure that you will like these if you try them.

Old English Sausage Muffins – quick and easy breakfast or party food! Super simple to make with only 6 ingredients. English muffins, sausage, Old English cheese spread, Worcestershire sauce, garlic powder, and cayenne pepper. I always have the ingredients on hand to whip these up. Great for breakfast, lunch, dinner, tailgating, and holiday parties. You MUST try these ASAP!

Ingredients:
½ pound Recipe Essential Country Sausage
12 eggs
½ cup chopped onion
½ tsp salt
¼ tsp pepper
½ cup cheddar cheese (shredded)
5 Simple Steps:
1. Preheat oven to 350° F. Lightly grease 12 muffin cups, or line with paper muffin liners.
2. Heat a large skillet over medium high heat and stir in sausage, cook for 10-20 minutes; until sausage is crumbly, evenly browned and no longer pink; drain.
3. Beat eggs in a large bowl. Stir in onions, salt, pepper and garlic powder. Mix sausage and cheddar cheese. Spoon mixture into prepared muffin cups approximately 1/3 full.
4. Bake in preheated oven until knife inserted in the center comes out clean, approx 20-25 minutes.
*These muffins can be made ahead, frozen or reheated in the microwave (1 minute 30 seconds)*
