How To make Cheesy Popovers
2 Eggs, beaten
1 c Milk
3/4 ts Salt
1/2 ts Thyme, crushed
1/4 ts Sage, crushed
1/2 ts Basil, crushed
1 c Unbleached flour
1/2 c Grated cheddar cheese
Combine seasonings with milk and eggs; add flour and cheese; mix until just blended. Pour into well-oiled muffin tins, filling 2/3 full. Do not preheat oven. Place muffin tin in oven, and heat to 450 degrees. Bake 30 minutes, no peeking. Remove from oven; turn off heat. Pierce popovers on 4 sides at right angles. Return to oven (do NOT turn on heat). Allow
popovers to dry in oven about 10 minutes. Serve immediately.

How to make Popovers!
Popover Recipe:
Ingredients:
*1 cup flour (sift after measuring)
*1 cup milk (warmed)
*1 tablespoon butter
*4 eggs (room temperature)
* 1/2 teaspoon salt
*Optional: grated cheese
Step 1: Mix sifted flour and salt together.
Step 2: Heat the milk and butter together until warm and butter is melted.
Step 3: Add milk mixture to flour mixture and stir until incorporated.
Step 4: Add eggs in one at a time, whisking between each one until incorporated.
Step 5: Spray muffin tins with cooking spray.
Step 6: Pour mixture into muffin tins- filling them 3/4 of the way
Step 7: Bake for 12-15 minutes at 450 degrees Fahrenheit. Then turn oven down to 350 degrees Fahrenheit and bake for another 15 minutes.
Notes: Once the popovers go in the oven DO NOT OPEN THE OVEN DOOR until they are done baking. Grated cheese can be added to the batter when it goes into the tins- we have used different types of cheeses and all have been good. If you have a blender then using that instead of a bowl and whisk works just as well. Having the milk on the hot side helps it mix into the flour.

POPOVERS RECIPE
Makes 6

INGREDIENTS:
3 eggs
1 ½ cups of milk
½ teaspoon kosher salt
1 ½ cups all-purpose flour
Vegetable oil for greasing
METHOD:
Place the oven rack on the lowest level. Preheat the oven to 450F.
Allow the eggs and milk to come to room temperature or better yet, for quicker preparation, place the milk in the microwave at :30 intervals until lukewarm. Submerge the eggs in a bowl of warm water for 10 minutes.
Whisk together the eggs and the milk until combined well.
Slowly add the flour a little at a time until combined and smooth. Don't over mix, small lumps are OK.
Grease the popover pan with the oil. Be generous with the oil!
Place the popover pan on a sheet pan, and place it in the oven, empty, in order to preheat the pan, for 15-minutes.
Meanwhile you can transfer the batter to a pitcher for easy pouring of the batter into the pan.
Only fill each well ⅔ of the way up the pan. The less the wells are filled the higher the popovers will rise.
Bake for 20 minutes at 450F, then reduce the heat to 350F and bake for 10-15-minutes more.
Do not open the door while they are baking or they will deflate!
Try to go the full 15-minutes on the second stage of baking for crispier exteriors and easy release! Underbaked popovers will stick to the pan!
Serve immediately!
