How To make Cheesy Popovers
2 Eggs, beaten
1 c Milk
3/4 ts Salt
1/2 ts Thyme, crushed
1/4 ts Sage, crushed
1/2 ts Basil, crushed
1 c Unbleached flour
1/2 c Grated cheddar cheese
Combine seasonings with milk and eggs; add flour and cheese; mix until just blended. Pour into well-oiled muffin tins, filling 2/3 full. Do not preheat oven. Place muffin tin in oven, and heat to 450 degrees. Bake 30 minutes, no peeking. Remove from oven; turn off heat. Pierce popovers on 4 sides at right angles. Return to oven (do NOT turn on heat). Allow
popovers to dry in oven about 10 minutes. Serve immediately.

3 cups whole milk
3 cups flour
1-1/2 teaspoon salt
6 eggs
1-1/4 cup (lightly packed) shredded Gruyere cheese, separated
2 Tablespoons minced fresh chives
2 Tablespoons unsalted butter, cut into cubes
Preheat oven to 400°.
In a medium saucepan over medium heat, warm the milk just until bubbles form around the edges.
Sift the flour and salt together in a bowl and set aside.
In a separate large, bowl, whisk the eggs until frothy, and then slowly whisk the warm milk into the eggs, whisking constantly so eggs don't cook. Whisk the flour mixture just until combined, then whisk in 1 cup of the cheese and the chives.
Place the popover pan in the oven for 2 minutes to heat. Remove it and add a pat of butter to each cup. Once the butter has melted, portion the batter into the cups, filling each about ¾ full. Top with a portion of the remaining cheese.
Bake the popovers for 20 minutes, then reduce the oven temperature to 300°, and continue baking about 10 more minutes.
Remove the popovers from the oven and serve warm.

Easy to Make Popovers Recipe
Popovers a classic simple to prepare side dish that’s great to serve up for a holiday meal or even as a delicious accompaniment to any main weeknight meal.
Popovers are a tasty bread-like recipe that is doughy, flaky, and nothing short of delicious. They are loaded with protein and incredibly easy to prepare to make it an amazing side dish to any meal. They are however most often served up over the holidays as a savory side dish but can also be enjoyed at breakfast with some jam or jelly.
Ingredients for this recipe:
• 8 large eggs
• ¼ cup melted unsalted butter
• 3 cups whole milk
• 3 cups all-purpose flour
• ¾ teaspoon sea salt
Makes 12
Prep Time: 10 minutes
Cook Time: 30 minutes
Procedures:
1. Preheat the oven to 425°.
2. Add the popover pan or muffin tin to a sheet tray and preheat in the oven for 10 minutes.
3. In a large bowl whisk together the eggs, butter, and milk until combined and smooth.
4. Next in a separate large bowl whisk together the flour and salt until combined and then add in the wet ingredients.
5. Whisk until completely smooth and set aside.
6. Take the preheated pan out of the oven and immediately spray with non-stick spray. Evenly pour in the batter until each cup is about 2/3 to ¾ of the way full.
7. Bake at 425° for 20 minutes and then at 325° for 10 minutes.
8. Serve.
Chef Notes:
Make-Ahead: These are meant to be eaten as soon as they are baked, but they can be made up to 1 day ahead of time. Reheat them before serving.
How to Reheat: Place the desired number of popovers on a sheet tray lined with parchment paper and bake in the oven at 350° for 3-4 minutes or until hot. You can also cook in the microwave on a microwave-safe plate until hot.
How to Store: Store covered in the refrigerator for up to 3 days. Cover and freeze for up to 2 months. Thaw in the refrigerator for 1 day before reheating.
You do not have to use a popover pan for this recipe, simply substitute with a large 6 or regular 12 count muffin tin.
If you cannot get the batter thin enough when whisking, transfer to a blender and blend on high until it is completely smooth.
You may need to cook these in batches if you only have 1 pan.
How to make Popovers!
Popover Recipe:
Ingredients:
*1 cup flour (sift after measuring)
*1 cup milk (warmed)
*1 tablespoon butter
*4 eggs (room temperature)
* 1/2 teaspoon salt
*Optional: grated cheese
Step 1: Mix sifted flour and salt together.
Step 2: Heat the milk and butter together until warm and butter is melted.
Step 3: Add milk mixture to flour mixture and stir until incorporated.
Step 4: Add eggs in one at a time, whisking between each one until incorporated.
Step 5: Spray muffin tins with cooking spray.
Step 6: Pour mixture into muffin tins- filling them 3/4 of the way
Step 7: Bake for 12-15 minutes at 450 degrees Fahrenheit. Then turn oven down to 350 degrees Fahrenheit and bake for another 15 minutes.
Notes: Once the popovers go in the oven DO NOT OPEN THE OVEN DOOR until they are done baking. Grated cheese can be added to the batter when it goes into the tins- we have used different types of cheeses and all have been good. If you have a blender then using that instead of a bowl and whisk works just as well. Having the milk on the hot side helps it mix into the flour.
