Cheesy Ham and Potato Casserole
Creamy and cheesy casserole made with potatoes and leftover ham.
Ingredients:
4 tablespoons butter
1/2 cup onion, diced
4 tablespoons all-purpose flour
2 1/2 cups milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 medium potatoes, peeled and diced
1 1/2 cups diced ham
2 cups shredded cheddar cheese
INSTRUCTIONS
Preheat oven to 350 F. Place potatoes into a large saucepan and cover with water. Bring to a boil over medium heat, let simmer until fork tender. Drain.
Melt butter in a large saucepan over medium heat. Cook onion until softened. Add in flour and cook for a minute to brown. Pour in milk and season with salt and pepper. Continue to cook over medium heat, while whisking constantly until thickened.
In a large bowl, mix potatoes with diced ham and sauce, spread mixture out into a large greased baking dish. Top with cheese and bacon. Bake for 25-30 minutes.

1.5 lbs Little potatoes (I used Boomer Gold)
¼ cup salted butter
1 small onion (finely diced)
1 teaspoon minced garlic
1 teaspoon dried parsley
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon paprika
3 tablespoons all purpose flour
2 cups half and half or whole milk
½ cup sour cream
3 cups cubed, cooked ham
1½ cups shredded cheddar cheese
Instructions
If baking immediately, preheat the oven to 350 degrees F. If making ahead, preheat the oven before baking.
Quarter potatoes and add to a large pot. Cover with cold water and season with salt.
Bring to a boil over high heat and reduce to medium-high, boiling until just tender, about 10 minutes.
Meanwhile, make the sauce. Melt the butter in a large skillet and add onion. Cook until onion is softened and translucent.
Stir in garlic, parsley, salt, pepper, and paprika and cook 1 minute.
Whisk in flour until smooth.
Whisk in half and half and cook over medium heat, stirring constantly, until thickened. Stir in sour cream.
Place cooked potatoes and ham in a lightly greased 9x13 baking dish. Pour sauce over top and stir.
Sprinkle cheese over top and bake at 350 degrees F for 20 minutes or until bubbly and cheese is melted. (OPTIONAL: you can cover and refrigerate up to 4 days at this point. Note that if the casserole is cold it may require additional bake time). Serve.

8 slices honey baked ham
8 slices swiss cheese
1/4 cup parsley chopped
2 cups swiss cheese grated
2 large eggs
1 cup half and half milk
INSTRUCTIONS
1. Preheat oven to 350°F. Grease a square 9-inch baking pan and set aside.
2. Peel the potatoes and cut to 1/4-inch thickness.
3. Press a layer of potatoes into the prepared pan and season with salt and pepper. Add 4 slices each of ham and cheese.
4. Repeat with a layers of potatoes, ham and then cheese. Add one final layer of potatoes, parsley and then cheese.
5. In a medium bowl, whisk together eggs and half and half. Pour evenly over grated cheese.
6. Bake for 45 minutes until cheese is golden. Serve and enjoy!

• 4/5 ham slices
• 1 avocado
• 1 cup shredded mozzarella
• Salt, to taste
• Pepper, to taste
• 4 potatoes
Instructions
• First of all boil your potatoes until soft.
• Meanwhile, cut your ham and avocado in approx. 1 cm squares.
• In a bowl, mix ham, avocado, shredded mozzarella and salt and pepper to taste.
• Hollow out each potato by cutting a circle out of the top of the potato then scooping out the insides.
• Place your potato on a baking tray and fill them with your ham, avocado and mozzarella mix.
• Bake at 400 °F for 15 minutes and serve!

Cheesy potatoes of any kind is one of my favorites, I mean who doesn't like cheesy potatoes? This is so easy to make, the soft potatoes with the cheesy sauce and bits of charred cheese on the sides is such a wonderful side dish.

Cheesy Potatoes Recipe:
Ingredients:
About 8 russet potatoes (Measure the potatoes in your baking pan)
3 cups cheddar cheese or cheese of your choice
4 tbsp unsalted butter
4 tbsp flour
2 tsp garlic paste
2 cup while milk
Makes 9x13 size baking pan
Bakes for about 1 hour 10 mins
Cooking Process
Cut your potatoes with a mandolin to ¼ inch thick. Soak in water to prevent from turning brown.
In a sauce pan on low heat, add your butter and allow to melt. Once melted, add in your garlic and allow the garlic butter mix to come to temperature for about one minute.
Once your butter has come to temp, then add your flour. Mix well and continue whisking for about 2 minutes once the flour has incorporated into the butter mixture.
After about 2 minutes, your rue should be golden brown. Once the rue is golden brown, it is ready to add the milk. Add the milk little by little, and incorporate the milk into the rue.
Once everything is mixed, add in about 1 ½ cup of cheese, I add close to 2 cups of cheese. I like a thick cheesy consistency.
Incorporate the cheese and mix well.
Strain and dry your potatoes
Pour the cheese sauce over the potatoes and fold in the sauce to coat the potatoes evenly.
Put the coated potatoes in your baking pan, top with remaining cheese and cover with foil.
In a preheated oven 350 degrees, cook for 40 minutes covered and the last 20 – 30 minutes uncovered until the top is golden brown.
