3 ea Eggs; Lg, Beaten
2 1/2 c Milk
4 ts Mustard; Prepared
1/4 ts Salt
1/4 ts Dill Weed
1/8 ts Pepper
8 oz Macaroni; Cooked, Drained
1 1/2 c Cheddar; Md, Shredded
1 c Cooked Ham; Cubed
1/4 c Onion; Chopped
1/4 c Pimento; Chopped
Combine the eggs, milk, mustard and seasonings. Add 1 cup of the cheddar cheese, the ham, onion and pimento and the macaroni, blending well, and pour into a buttered 2-quart shallow baking dish. Bake in a preheated 350 Degree F. oven for 45 minutes and remove from the heat. Quickly sprinkle the remaining cheddar cheese on the top and serve hot. Cheesy Ham and Broccoli Casserole
1/2 onion
1 tbs margarine
1 frozen bag of broccoli
1 package “ready” penne pasta (or cook 1 cup dry penne pasta)
1 cup chopped lunch meat ham
1 can cream of chicken soup
2 cups shredded Mexican cheese (divided)
3 tbs bacon bits
1/4 tbs Parmesan
Topping:
1/2 cup panko crumbs
2 tbs melted butter
1/4 cup Parmesan cheese
Chop onion
Cook onion and margarine for a few minutes
Cook broccoli according to directions on the packaging
Heat (or cook) penne pasta
Chop lunch meat ham
In large mixing bowl add: cream of chicken soup, bacon bits, Parmesan cheese, 1 cup shredded cheese (reserve 1 cup)
Stir. Add in broccoli, ham, and penne pasta
Grease 9x13
Add half of mixture
Sprinkle with remaining cheese
Add remaining pasta mixture
In separate dish combine panko crumbs,
Melted butter, and Parmesan cheese
Sprinkle over top
Bake at 350° 25-30 minutes
Cheesy Ham and Potato Casserole
Creamy and cheesy casserole made with potatoes and leftover ham.
Ingredients:
4 tablespoons butter
1/2 cup onion, diced
4 tablespoons all-purpose flour
2 1/2 cups milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 medium potatoes, peeled and diced
1 1/2 cups diced ham
2 cups shredded cheddar cheese
INSTRUCTIONS
Preheat oven to 350 F. Place potatoes into a large saucepan and cover with water. Bring to a boil over medium heat, let simmer until fork tender. Drain.
Melt butter in a large saucepan over medium heat. Cook onion until softened. Add in flour and cook for a minute to brown. Pour in milk and season with salt and pepper. Continue to cook over medium heat, while whisking constantly until thickened.
In a large bowl, mix potatoes with diced ham and sauce, spread mixture out into a large greased baking dish. Top with cheese and bacon. Bake for 25-30 minutes.

¼ cup salted butter
1 small onion (finely diced)
1 teaspoon minced garlic
1 teaspoon dried parsley
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon paprika
3 tablespoons all purpose flour
2 cups half and half or whole milk
½ cup sour cream
3 cups cubed, cooked ham
1½ cups shredded cheddar cheese
Instructions
If baking immediately, preheat the oven to 350 degrees F. If making ahead, preheat the oven before baking.
Quarter potatoes and add to a large pot. Cover with cold water and season with salt.
Bring to a boil over high heat and reduce to medium-high, boiling until just tender, about 10 minutes.
Meanwhile, make the sauce. Melt the butter in a large skillet and add onion. Cook until onion is softened and translucent.
Stir in garlic, parsley, salt, pepper, and paprika and cook 1 minute.
Whisk in flour until smooth.
Whisk in half and half and cook over medium heat, stirring constantly, until thickened. Stir in sour cream.
Place cooked potatoes and ham in a lightly greased 9x13 baking dish. Pour sauce over top and stir.
Sprinkle cheese over top and bake at 350 degrees F for 20 minutes or until bubbly and cheese is melted. (OPTIONAL: you can cover and refrigerate up to 4 days at this point. Note that if the casserole is cold it may require additional bake time). Serve.

Ingredients
4 large baking potatoes peeled
1 tsp salt
1 tsp black pepper ground
10 slices ham
10 slices swiss cheese or cheddar
1/2 cup parsley chopped
2 1/2 cups shredded swiss cheese or mozzarella
2 large eggs
1 cup heavy cream
Instructions
-Preheat oven to 350°F. Grease an ovenproof skillet.
-Peel the potatoes and slice into about 1/4-inch thickness pieces.
-Press a layer of potatoes into the prepared pan and season with salt and pepper. Add 4 slices each of ham and cheese.
Repeat with a layers of potatoes, ham and then cheese. Add one final layer of potatoes, parsley and then cheese.
-In a medium bowl, whisk together eggs and heavy cream. Pour evenly over grated cheese.
-Bake for 45 minutes until cheese is golden and bubbly. Serve and enjoy!
