How To make Cheese and Corn Tortillas
16 oz Low-fat cottage cheese
1 c Canned kernel corn
6 oz Shredded, reduced fat
-cheddar cheese 1/4 c Sliced green onions
2 tb Chopped fresh cilantro
1/4 ts Mexican seasoning
6 Flour tortillas (6")
1/2 c Salsa
Pre-heat oven to 350 Grease 9 x 13 inch baking dish Mix first 6 ingredients but reserve 1/2 cup cheddar cheese Spoon about 1/2 cup of mixture down center of each tortilla Roll and arrange seam side down in baking dish Top with salsa and remaining 1/2 cup cheddar cheese Bake at 350 for 30 minutes Makes 6 servings; 280 calories, 8 g fat, 22 g protein, 30 mg cholesterol, 29 g carbohydrate, 560 mg sodium each

cream 150ml
lemon juice 1 tbsp
milk 2-3 tbsp
Salad:
Red cabbage 1/2 cup
lettuce
Carrot julianne 1/2 cup
boiled Corn 1/2 cup
Onion chopped 1/2 cup
Pickled red jalapenos (Optional)
lemon juice 1 tbsp
salt 1/2 tsp
black pepper powder 1/2 tsp
Tortilla
mozzarella & cheddar cheese grated
butter as required

230g ground beef
1 egg
salt to taste
black pepper to taste
paprika
mix well
50g chopped onion
15g green onion
15ml olive oil
Mix well
Tortilla(23cm)
Fold and unfold the tortilla in half
Take some of the meat fillings
Put the filling on the tortilla
Spread the beef on half of the tortilla evenly
Sprinkle some mozzarella cheese
Fold the tortilla in half
Tortilla(17cm)
You can also make it with smaller tortillas
Fold than unfold in quarters
Cut the tortilla like this
Spread the beef filling on 3/4 of the tortilla like this
Fold the tortilla like this
Repeat

Medium-low heat
Olive oil
Spread the oil every in the pan
Fry the tortilla for 5 minutes
Flip and fry for another 5 minutes
The color should be golden brown
Done!

Add some olive oil to the pan
Place the small tortillas in the pan
Fry for 5 minutes
Brush oil on top
Flip then fry for 8 minutes
Add 1tbsp water in the pan
Done!

What kinds of tortillas do you use?
We use corn tortillas. You can use flour, but the flour absorbs a lot more of the oil and makes it a little bit greasier.
Oh, interesting.
Yeah. We like to use corn tortillas in our cooking.
So you just softened it in the oil. You're not frying it, or not browning it.
No. You want it soft, just to kind of get a little bit of texture on it, and it will be easy to fold. And also it won't break as you fold it.
There's a lot of debate about how mole should be served. I don't like it too thick. So what you do is you basically toss it around. You get the flavor in it. You want to always have the tortilla ready before you start this.
As you see, I'm going to fold it as an enchilada. I should make another one, too.
