How To make Cheddar Pinwheels
2 c Unbleached Flour; Sifted 1/4 c Butter
1/2 ts Salt 2/3 c Milk
1 tb Baking Powder 1 c Cheddar; Extra
Sharp, Grated Sift the flour, salt, and baking powder together in a mixing bowl and then cut into the butter. Add the milk and stir together quickly but thoroughly. Turn out on a floured board and knead for 30 seconds then roll out to a 1/8-inch thickness. Spread with the grated cheese and roll up tightly like cinnamon rolls. Cut into 3/4-inch slices and transfer to baking sheets and bake in a moderate oven (375 degrees F.) for 20 minutes or until delicately browned. -----

Quick and easy recipe using puff pastry, tomato puree/paste and cheese. I used cheddar and mozzarella as they go so well together. These pinwheels are perfect for parties as an appetizer,starter or quick snacks.

Pizza Pinwheels AND Bacon Cheddar Ranch Pinwheels
Pizza Pinwheels
8 ounces cream cheese
1/2 cup pizza sauce
1 cup pepperoni, diced
1/4 cup onion, finely chopped
1/4 cup green pepper, finely diced
1 cup shredded mozzarella
tortillas
Blend cream cheese and pizza sauce. Stir in pepperoni, onion, green pepper, and mozzarella.
Spread 1/4 to 1/3 of mixture onto a tortilla. Spread to the edge but leaving about one inch uncovered at the end of the tortilla. Tightly roll up the tortillas. Repeat with another two or three tortillas until all the mixture is used.
Cover or wrap tightly and refrigerate at least two hours. Slice and place on serving platter.
Bacon Cheddar Ranch Pinwheels
8 ounces cream cheese
scant 1 cup mayonnaise
2 cups shredded cheddar cheese
1/2 cup bacon
1/2 cup pecans, finely chopped
3 green onions
1 1/2 Tablespoons Ranch Mix
tortillas
Blend cream cheese and mayonnaise. Stir in cheddar cheese, bacon, pecans, onions, and ranch mix.
Spread 1/4 to 1/3 of mixture onto a tortilla. Spread to the edge but leaving about one inch uncovered at the end of the tortilla. Tightly roll up the tortillas. Repeat with another two or three tortillas until all the mixture is used.
Cover or wrap tightly and refrigerate at least two hours. Slice and place on serving platter.
