Yield: 12 to 16 servings
Ingredients
Base Spread and Tortillas:
Two 8-ounce blocks cream cheese, softened
1/4 cup jarred pesto
2 burrito-size spinach tortillas
2 burrito-size whole wheat tortillas
2 burrito-size jalapeno-Cheddar tortillas
Veggie Pinwheels:
1 cup spinach leaves, chopped
One 6-ounce jar marinated artichoke hearts, chopped
1/4 cup sliced green olives
1/4 cup sliced sun-dried tomatoes
Meaty Pinwheels:
4 slices Swiss cheese
8 large slices pepperoni
8 large slices salami
8 large slices spicy capicola
Spicy Pinwheels:
4 slices pepper jack cheese
1 cup arugula
6 mini sweet peppers, slice thin
1/2 cup chopped hot cherry peppers
Directions
For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. Refrigerate the rolled tortillas for at least 2 hours and up to 12 hours.
Unwrap and slice each tortilla into 1-inch segments/pinwheels. Arrange on a platter and serve.

To make these pinwheel cookies, phyllo dough is brushed with melted butter, sprinkled with cardamom sugar, rolled into a spiraled log, and sliced and baked. In the oven, the melted butter and cardamom sugar mingle and caramelize on the sheet pan, forming a glassy surface, while the phyllo bakes up flaky and golden all the way through. The cookies are so shatteringly tender that they give palmiers, a buttery French cookie
made from puff pastry (and one of my favorite cookies), a run for their money.

Ingredients
Homemade Tortillas
Makes about 12 tortillas
3 cups (375g) flour
1/3 cup (70ml) oil
1 tsp (4g) baking powder
1 tsp (5g) salt
3/4 cup (180ml) warm water
Filling - for 5-6 tortillas
Makes about 4 dozen slices
3/4 cup (200g) sour cream
8 oz (220g) cream cheese, softened
3.5 oz (100g) black olives, chopped
1/4 cup chopped red pepper (about 50g)
1 cup (100g) shredded cheddar cheese
1/2 cup green onion, about 2 springs, chopped
1/2 tsp garlic powder
Salt to taste
1. Prepare the tortillas. In a medium bowl, mix flour with salt and baking powder. Add oil and warm water to the flour mixture. Mix everything together using your hands, knead until smooth and pulls away from the sides of the bowl.
2. Cut into 10-12 equal pieces. With a rolling pin, roll out each one to a circle about 9in (23cm) in diameter and 3/4in (1.5-2 mm) thick. they need to be really thin, almost transparent.
3. Preheat a large non-stick pan over medium-high heat. You don't need to add any oil or butter. Cook the tortilla on both sides until the dough get brown spots all over the tortilla, that will only take few seconds. Must be very careful and work rapidly as they cook really fast. Don't over cook so the tortilla remain soft and able to be rolled. Once finished, the tortillas are ready to serve.
4. To store the tortillas, cool completely and place them in a zipper bag and refrigerate up to 5 days. You can also freeze them in plastic freezer bag but make sure to place parchment paper between tortillas to make sure they do not stick.
5. Prepare the filling. In a large bowl, mix the filling ingredients until well combined.
6. Spread over 5-6 tortillas and roll up tightly. Wrap the rolls with plastic wrap and refrigerate for several hours or overnight to blend the flavors.
7. Unwrap the rolls, and using a very good sharp knife cut into 1/2- 3/4-in (1-2 cm) slices. Discard ends. Garnish with parsley and serve with spicy salsa for dipping.

Hi, it’s Kristi in the Rada Cutlery kitchen, and today I want to show you how to make delectable cherry pinwheel cookies.
Combine 1 cup butter and 1 cup sugar in a large mixing bowl. Mix in 1 teaspoon vanilla and 1 egg until combined. Stir in 2 ½ cups flour until incorporated. Divide the dough in half. Cover a cutting board with plastic wrap and use another piece of wrap to press out half the dough into an 8 inch square.
Spread half a cup of chopped cherries over the dough to within a half inch of the edges. Use the wrap to roll up the dough. Pinch the edges of the dough to seal. Wrap tightly and refrigerate for at least 2 hours or until the dough is firm. When the dough has set, preheat your oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
Cut ¼” slices from the roll and place on the baking sheet. Bake for 6 to 8 minutes or until the bottoms of the cookies are lightly browned. Let the cookies cool on the baking sheet for 2 minutes before moving to a wire rack. And there you have delicious cherry pinwheel cookies! Be sure to subscribe to our YouTube channel, and visit our website at RadaCutlery.com.
