How To make Carrot And Raisin Cheescake
Ingredients

graham cracker crumbs

granulated sugar

butter, or margarine, melted

cream cheese, softened

granulated sugar

cup
unbleached all-purpose flour

large eggs
1/4
cup
unsweetened orange juice
1
cup
finely shredded carrot
1/4
cup
raisins
1/2
teaspoon
nutmeg, ground
1/4
teaspoon
ginger, ground
1
tablespoon
unsweetened orane juice
1
cup
sifted powdered sugar
Directions:
Combine crumbs, granulated sugar, cinnamon and margarine, press onto bottom
of 9-inch springform pan. Bake at 325 degrees F., 10 minutes. Combine 20
ozs cream cheese, granulated sugar and 1/4 c flour, mixing at medium speed
on electric mixer until well blended. Blend in eggsand juice. Add combined
remainig flour, carrots, raisins, and spices; mix well. Pour over crust.
Bake at 450 degrees F., 10 minutes. Reduce oven temperature to 250 degrees
F., continue baking for 55 minutes more. Loosen cake from rim of pan; cool
before removing rim of pan. Chill. Combine remaining cream cheese and
juice, mixing until well blended. Gradually add powdered sugar, mixing
until well blended. Spread over top of cheesecake. Garnish with additional
raisins and finely shredded carrots, if desired.

This recipe was adapted from Cooks Illustrated.
1 1/2 cups white sugar
1/2 cup packed light brown sugar
4 eggs
1 1/2 cups canola oil
3 cups peeled and shredded carrots (6 medium carrots)
2 1/2 cups all purpose flour
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Raisins and walnuts, if desired
Cream Cheese Frosting:
1 1/4 cups powdered sugar
8 ounces cream cheese, softened
5 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1 tablespoon sour cream

Baking dish: 11*21 cm.
Ingredients:
- 200 grams of cottage cheese
- 130 grams of butter (9 tablespoons)
- 1/4 teaspoon salt
- 120 grams of sugar (2/3 cup)
- 1/2 teaspoon vanilla extract
- 2 eggs
- 160 grams cake flour (1 cup)
- 50 grams of raisins (1/3 cup)
Additionally:
- 20 grams of butter
Bake in preheated 350°F (180°C) oven / 45 minutes.
