How To make Carrot Raisin Cake (Ovo)
2 1/2 c +2TB whole wheat pastry
Flour 1 1/2 ts Baking soda
1 1/2 ts Cream of tartar
1 1/2 ts Cinnamon
1/4 ts Ground nutmeg
1 1/2 c Honey (I think this could be
Cut in half) 1/3 c Frozen pineapple juice
Concentrate, defrosted 2 ts Vanilla
2 Egg whites, unbeaten (or egg
Replacer to equal) 1 1/2 c Grated, peeled carrots
2 4 oz. jars carrot baby food
Puree 1 c Raisins
2 Egg whites, lightly beaten
(or egg replacer to equal) Preheat oven to 325 degrees. In large mixing bowl, combine flour, baking soda, cream of tartar, cinnamon and nutmeg. Set aside. In medium bowl, mix honey, juice concentrate, vanilla, unbeaten egg white mixture and carrots. Stir into flour mixture and mix until just blended. Stir in raisins. Gently stir in lightly beaten egg white mixture. Do not overmix! Spoon batter into two 9" round nonstick baking pans. Bake at 325 degrees for 40-45 mins or until toothpick comes out clean. Cool on wire racks for 20-30 mins and remove from pans.
This is a delicious cake! Can be sprinkled with powdered sugar or frosted with melted fruit preserves if you don't have a lowfat frosting recipe. Ingredients for this delicious and easy Starbucks carrot cake with cream cheese frosting
4 eggs
1 packet of vanilla
1 glass (180 g) of sugar
160 ml of oil
160 ml of milk
1 teaspoon cinnamon
240 gr flour
1 packet (7 g) of baking powder
2 cups grated carrots
3/4 cup walnuts
You can also add raisins if you want
for the frosting
150 g well softened butter
400 g cream cheese or labneh cheese (be sure to drain the water of cheese)
2 cups powdered sugar
The glass measurement I use: 200 ml standard water glass.

How to make a Healthy Carrot Cake
• Carrot Cake:
• 4 egg whites
• 2 whole eggs
• 1/3 cup of canola oil
• 1/3 cup of unsweetened applesauce
• 1 cup of apple juice concentrate
• 1/4 cup of water
• 3 cups of whole wheat grain flour
• 1 tablespoon of baking powder
• 1 teaspoon of baking soda
• 1 cup of raisins
• 1 teaspoon of salt
• 2 tablespoons of ground cinnamon
• 1/4 teaspoon of grated nutmeg
• 2 1/2 cups of fresh grated carrots
• Sugar free cream cheese frosting for the cake:
• 1 1/2 cups of cream cheese at room temperature
• 1 1/2 teaspoons of butter
• 1 cup of splenda
• 2 teaspoons of vanilla extract
Directions
1. Carrot Cake:
2. Preheat the oven to 350F.
3. Beat the egg whites until soft peaks are formed and it doubles in volume.
4. Break in the eggs, one by one, and beat well.
5. Add the apple sauce, apple juice, oil and water and blend the mix well so that everything is well incorporated.
6. In a bowl, sift together the whole wheat flour, baking powder, baking soda, salt, ground cinnamon and grated nutmeg.
7. Add the dry ingredients to the wet egg apple mix and blend well.
8. Stir in the grated carrots, add the raisins, and mix well.
9. Grease two 9-inch baking pans and pour the batter in the two pans equally. Smooth the tops.
10. Bake in the oven at 350F for about 25-30 minutes and then again at 325F for about 10-12 minutes.
11. Remove and cool on a wire rack before serving or applying frosting.
12. Sugar free cream cheese frosting for the cake:
13. Beat the Splenda in a mixer to get a fine sugar mix.
14. Add the cream cheese and butter to the mix and beat well to get a smooth mix.
15. Mix in the vanilla extract.

6 cups grated carrots
1 cup brown sugar
1 cup raisins
4 eggs
1.5 cups white sugar
1 cup vegetable or grape seed oil
2 tsp vanilla essence
1 cup crushed pineapple drained
3 cups all purpose flour
1.5 tsp baking powder
1 tsp salt
4 tsp ground cinnamon
1 cup chopped walnuts
In a large bowl add grated carrot and sugar set aside for 30 mins
Preheat over 350 degrees F
In another bowl beat egg 5 minutes medium speed. Add in sugar, oil and vanilla. Add pineapple. Add dry ingredients, raisins and nuts. Do not over beat. Grease and flour two 10 inch cake pans and pour cake mix.
Bake 45 mins. Grab skewer and test cake by putting skewer in the middle of cake if it comes up dry the cake is ready to come out of the oven.
