How To make Caramel Snappers
- Marne Parry PKKW92A 90 Pecan halves
28 Vanilla caramels
2 ts Water
1/2 c Semi-sweet chocolate pieces
: Toast pecan halves by spreading in a single layer in a shallow baking pan. Toast in 350 oven about 10 minutes, stirring occasionally. Linea baking sheet with foil; butter foil. On the prepared baking sheet arrange the pecan halves in groups of three, placing flat side of pecans down; set aside. : In a heavy 1 quart saucepan combine caramels and water. Cook over low heat; stir constantly till caramels are melted and smooth. : Remove saucepan from heat. Drop about 1 teaspoon caramel mixture onto each group of pecans. Let stand about 20 minutes or til caramel is firm. : In a small saucepan, heat the chocolate over low heat, stirring constantly, til chocolate is melted and smooth. Remvoe saucepan from heat. With a narrow metal spatula spread a small amount of chocolate over top of each caramel center. Let stand until firm; remove candy from baking sheet. Store tightly covered. Source: Brach's candy.

Making Caramel Snappers (AKA Turtles) using a vintage recipe from 1966

~Caramels~
1 cup butter or margarine (I used vegan Becel sticks)
2 1/4 cup brown sugar
Dash salt (I didn't add salt because I used salted butter)
1 cup light corn syrup
15oz can sweetened condensed milk (this works out to about 450mls)
1 tsp vanilla
Melt butter, add brown sugar and salt. Stir until thoroughly combined, stir in corn syrup and mix well. Gradually add milk, stirring constantly. Cook and stir over medium heat until candy reaches firm ball stage (245 degrees) about 12 - 15 mins. Remove from heat, stir in vanilla. Pour into a buttered 9 x9 dish. Cool and cut into squares.
Makes about 2 1/2 pounds. (I still have so much left caramel left after making the snappers)
~ Caramel Snappers ~
1 cup pecan halves
36 Caramels
1/2 cup semisweet chocolate pieces, melted
Arrange pecans flat side down in groups of 4. Place 1 caramel on each cluster of pecans. Heat in the oven (325 degrees) until caramels soften (about 4 - 8 mins)
Remove from oven and flatten caramel over pecans, cool slightly. Remove from pan and transfer to waxed paper. Swirl melted chocolate on top.

???? Vegan condensed milk ???? I live in Canada and I buy this at Bulk Barn. Check your grocery store or look in health food stores sometimes they will carry products like this. (I have seen it in Walmart before as well) They sometimes have it on Amazon but it's usually overpriced so I don't recommend that option.
