How To make Capellini with Shrimp and Herb Sauce
1 lb Capellini (angel hair) pasta
3 tb Olive oil
3 tb Butter or oleo
1 lb Raw shrimp, peeled, cleaned
2 Cloves garlic, minced
1 ts Lemon juice
1 tb Fresh parsley, chopped
1 ts Oregano
1 tb Dill weed
2 cn Chicken broth (10 1/2 oz)
Pepper to taste In a large pot of boiling, salted water, cook the capellini until just barely tender; drain, rinse, and place in a large bowl. Toss the capellini with a little olive oil to keep from sticking together. Meanwhile, in lge. skillet, heat 3 tbs. olive oil and 3 tbs. butter over med heat; add shrimp and garlic and saute until the shrimp just turns pink. Stir in lemon juice, basil, parsley, oregano, dillweed, and chicken broth; reduce the heat and simmer until heated through. Pour the shrimp mixture over the capellini and toss gently until the capellini is lightly coated. Season with pepper and serve immediately.

This dish tastes like one you would find in the best Italian restaurants. Be sure to prepare enough because everyone will want a second helping.
Ingredients
Penne Pasta 2 cups
Olive Oil 1 tbs
Minced Garlic ½ tsp
Peeled Shrimp ½ cup
Salt & Pepper to taste
Diced Tomatoes 1/3 cup
Clam Juice ¼ cup
White Wine 1 tbs
Heavy Whipping Cream 2 cups
Parsley ½ tbs
Basil Leaves ½ tsp
Crushed Pepper Flakes ¼ tsp
Grated Parmesan Cheese ½ cup
Water 6 cups
Garnish with parsley
Sprinkle with grated parmesan cheese
Procedures
1. Bring to boil 6 cups of water. Sprinkle with olive oil and a dash of salt.
2. Add penne pasta and cooked until al dente.
3. Remove and drain the water.
4. In a frying pan, add olive oil. Sauté minced garlic.
5. Add peeled shrimp and stir until turn golden brown.
6. Season with salt & pepper to taste.
7. Remove peeled shrimp and set aside.
8. Using the same pan, sauté diced tomatoes. Pour clam juice, white wine and heavy whipping cream. Bring to boil.
9. Add cooked peeled shrimp. Season salt & pepper, parsley, basil leaves and crushed pepper flakes.
10. Mix and simmer for about 3 minutes.
11. Add cooked penne pasta. Keep stirring.
12. Finally toss grated parmesan cheese and mix again. Simmer for 3 minutes.
13. Garnish with parsley and sprinkle with grated parmesan cheese.
14. Share and Enjoy!!!

Yields 1 serving
Ingredients
8-12 each 16/20 peeled, deveined shrimp
4 oz dry capellini / angelhair pasta
2 Tbsp Extra Virgin Olive oil
3 each garlic bulbs
1 each large shallot, small diced
2 tsp chili flakes
2 each lemons
¼ cup white wine
2 Tbsp capers
½ Cup cherry tomatoes, halved
½ Cup seafood stock
2 oz butter, cubed
1 parmesan cheese wedge
1 sprig basil, picked
TT Salt and Fresh Cracked Black Pepper
Method
Add water to a 4 quart sauce pot. Salt liberally, cover with a lid bring to a boil.
Heat a medium nonstick sauté pan on medium heat with one tablespoon of olive oil. When hot add the shallots, finely grate the garlic bulbs into the pan and sauté for 2 minutes to soften them. Deglaze the pan with the white wine and cook until it is almost evaporated from the pan. Add the seafood stock, chilli flakes, capers, cherry tomatoes and lemons (zested and juiced). When the sauce comes to a simmer, season the raw shrimp with salt and pepper and poach in the liquid for about 1 minute per side. Add the cubed butter to melt. Taste and season the sauce accordingly.
Meanwhile, when the pot of water begins to boil, add the pasta and use tongs or a fork to gradually push it into the seasoned water as it starts to soften. Boil the pasta, stirring occasionally so it doesn’t stick together, for about 3-5 minutes, or until al dente. Strain the pasta and quickly add it to the pan with the scampi sauce and cooked shrimp. Toss the pasta in the sauce to coat evenly. Finally, tear the fresh basil leaves and toss into the pasta before plating.
Plate the cooked pasta into a medium size bowl with some height. Garnish with a grating of parmesan cheese.
