1/2 c Butter 1 1/4 c Brown sugar 1 t Vanilla 2 Eggs 1 c All-purpose flour 3/4 c Semi-sweet chocolate chips 3/4 c White chocolate chips 12 Small scoops - Vanilla ice cream SAUCE: 1/4 c Butter, at room temp. 1 c Brown sugar 1 c Cream 1 t Vanilla In large bowl, beat butter with brown sugar. Beat in vanilla and eggs. Stir in flour just until mixed. Fold in chocolate chips. Spoon batter into greased 8 inch square baking dish; bake in preheated 350 F oven 35 to 40 minutes or until cake tester inserted in centre comes out clean. Cool. Cut into 12 squares. While squares are baking, make sauce. Place butter, sugar and cream in medium saucepan and bring to a boil. Cook, stirring, about 2 minutes. Add vanilla. Cool. INGREDIENTS: ❊ 1 box Simply Delish Butterscotch Pudding Mix ❊ 1 cup crushed Goodie Girl Double Stuffed Chocolate Sandwich Cookies, plus more for topping ❊ 3 cups heavy whipping cream or coconut cream for vegan option ❊ Chocolate sauce ❊ Caramel sauce ❊ Whipped cream (regular or dairy free)
INSTRUCTIONS 1. Add the heavy whipping cream/coconut cream along with the sachet of butterscotch pudding mix to a mixing bowl. Whip on high for 2 minutes until fluffy and combined. 2. Fold the crushed Goodie Girl sandwich cookies into the butterscotch ice cream base. 3. Transfer the mixture into a loaf tin or other freezer container. Top with more crushed chocolate cookies and a drizzle of caramel sauce. 4. Place in the freezer for at least 3 hours to set. 5. Line your serving cups with drizzles of chocolate and caramel sauce. Scoop up the butterscotch brownie ice cream and top with whipped cream and more chocolate sauce and enjoy!
Good brownies don't come from boxes, they come from the heart. By that I mean, lots of good butter, and made completely homemade. They don't have to be super fancy. Just some butter, flour, chocolate, and you should be well on your way to the best brownies of all time.
