This Easy Chicken Stuffing Casserole Bake is made with just a few simple ingredients including seasoned shredded chicken, cream of chicken soup, milk, and Stove Top stuffing. It's so delicious and flavorful and takes only 30 minutes to bake in the oven.

EASY CHICKEN AND STUFFING CASSEROLE
BAKING INSTRUCTIONS:
Bake at 400 degrees F covered with aluminum foil for 20 minutes + 10 minutes uncovered.
INGREDIENTS:
▪️ 2 Cups Boneless Skinless Chicken Breasts, cooked and shredded
▪️ 10.75 ounce cans condensed cream of chicken soup (I prefer fat-free)
▪️ 1/4 cup milk (2% or whole)
▪️ 1 6 ounce box Stove Top Stuffing Mix (herb seasoned or chicken), prepared as directed on box

Ingredients
1½ lbs. chicken thighs, boneless, skinless, cut into bite size pieces
1 Tbsp. canola oil
3 medium carrots, sliced diagonally into ½-inch pieces
1 medium sweet onion, cut into 12 wedges
6 garlic cloves, chopped
5 cups chicken stock, divided
2 Tbsp. all-purpose flour
1 dried bay leaf
12 oz. baby white potatoes, quartered
¼ cup fresh chopped parsley
salt and freshly ground black pepper
( i always add in extra seasonings... I added about 1/2 to 1 tablespoon of oregano...around a teaspoon of paprika...and around 1/2 tablespoon of garlic and herb seasoning)
Season the chicken with salt and pepper, to taste.
Heat oil over high heat. Add chicken and cook, stirring occasionally, until brown on all sides, about 6 minutes total. Transfer to a plate.
Add carrots and onion to the pot and cook, stirring often, until onions begin to soften, about 4-5 minutes. Add garlic and cook for about 30 seconds, stirring nonstop. Add ½ cup chicken stock while stirring and scraping to loosen browned bits from the bottom of the dutch oven.
In a small bowl, whisk together flour and ½ cup broth; add to the dutch oven. Stir in chicken and remaining 4 cups of chicken broth. Add bay leaf and season with salt and pepper, to taste. Bring to a boil, reduce heat to medium-low and simmer 25 minutes, partially covered.
Add potatoes and cook uncovered until potatoes are tender, about 18-20 minutes. The liquid will slightly reduce even further. Stir in parsley and discard bay leaf before serving.

Hi guys. Today was a super busy day and I needed a quick and easy dinner. So...I made Taco Casserole. :)
Taco Casserole
1 pound ground beef
1/2 tablespoon butter
1 medium onion, diced
2 jalapeno peppers, seeded and diced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 packet taco seasoning
3/4 cup water
14.5 ounce can diced tomatoes, undrained
14.5 ounce can of rotel
1 1/4 cups corn chips
16 ounce can refried bean
15 ounce can kidney beans
2 cups of cheese
Brown ground beef with onion and peppers. Stir in taco mix, water and diced tomatoes, do not drain.
Set aside. Stir together refried beans, rotel and kidney beans.
in a 9x13 baking dish, start by crush corn chips in the bottom to create a crust layer. Next, add the bean. Next add the meat. Next add the cheese. Bake at 375 for 15 minutes. Garnish with lettuce, tomatoes, black olives and green onion. Enjoy :)

Busy Day Hotdish

Ingredients
4 tablespoons unsalted butter, plus more for the baking dish
2 pounds ground beef (93 percent lean)
Kosher salt and freshly ground black pepper
1 large red bell pepper, chopped
1 bunch scallions (about 6), chopped
2 teaspoons paprika
1 cup frozen corn, thawed
1/3 cup all-purpose flour
2 1/2 cups low-sodium chicken broth
1/2 cup heavy cream
2 tablespoons chopped fresh Italian parsley
1 tablespoon Dijon mustard
2 teaspoons chopped fresh dill
2 teaspoons chopped fresh thyme
One 1-pound bag frozen seasoned curly fries
2 cups shredded Swiss cheese
Directions
Preheat the oven to 400 degrees F. Butter a 9-by-13-inch glass or ceramic baking dish.
Heat a medium Dutch oven over medium heat. Add the butter, and once it melts, add the beef and sprinkle with 1 teaspoon salt. Cook, crumbling with a wooden spoon, until browned, 4 to 5 minutes. Add the bell pepper and scallions (saving a handful of the greens for garnish) and cook until the vegetables begin to wilt, 2 to 3 minutes. Add the paprika and several grinds of pepper, then stir to coat the beef in the spices. Stir in the corn.
Sprinkle the flour over the beef and stir to incorporate. Cook and stir until the flour begins to toast, about 2 minutes. Add the broth and cream gradually while stirring. Bring to a simmer and cook until the sauce thickens, 3 to 4 minutes. Stir in the parsley, mustard, dill and thyme. Pour the mixture into the prepared baking dish. Arrange the curly fries in a tight layer over the top. Sprinkle with the cheese. Bake until the cheese and fries are crispy and the sauce is bubbly, about 40 minutes. Sprinkle with the reserved scallion greens and serve hot.
