How To make Buckwheat Groats
2 ts Safflower oil;
2 Shailots; chopped
1 cl Garlic; minced
1 Celery stalk; sliced
1/2 c Sliced mushrooms;
1 Egg white;
Pinch salt & pepper; 1 c Buckwheat groats;(kasha)
2 c Chicken broth;
1 tb Pine nuts/sunflower seeds;
In a non-stick saucepan, heat oil and add vegetables. Cook, stirring, over medium heat about 5 minutes. In a small bowl, beat egg white with salt and pepper. Stir into saucepan. Stir in groats, then add broth and bring to a boil. Reduce heat, cover and cook 10 minutes until tender. When liquid is absorbed, add pine nuts and fluff with a fork. Garnish with parsley. 1 cup buckwheat groats (or more/less depending on how much you need)
3-4 cups water for soaking
Optional: add 1 Tablespoon lemon juice or apple cider vinegar to your soaking water
Rinse the buckwheat thoroughly before soaking. Let the buckwheat soak 8-12 hours. Rinse again and wash away the soaking water. Top with your favorite toppings, and eat with plant milk (like cold cereal). Enjoy!

2. Put the rinsed buckwheat and the water in a pot and bring it to a boil
3. Reduce the heat to medium-low and cover with a lid
4. For the raw buckwheat: let it simmer 20 minutes (or until all the water is absorbed)
For the roasted buckwheat: let it simmer 15 minutes (or until all the water is absorbed)
5. Serve it plain or add a little bit of butter
6. Enjoy!
