How To make Broth Cooked Orzo with Lemon& Parsley
1 qt Vegetable stock
12 oz Orzo, or other small pasta
1 tb Olive oil
2 ea Garlic cloves, chopped
Juice of 2 lemons 1/2 c Parsley, chopped
Salt & pepper
Bring the stock to a boil. Add the pasta & cook until *al dente*. Drain & reserve the stock for future use. Toss the orzo with the olive oil & garlic. Season with the lemon juice, parsley, salt & pepper. Serve imemdiately.

???? 1 yellow onion, chopped

???? 2 carrots, peeled and sliced into 1/4-inch rounds
???? 3 garlic cloves, minced
???? Kosher salt and black pepper
???? 1 pound boneless skinless chicken breast (2 breast halves)

Chicken Orzo Soup
Thank you Tiffany for an amazing soup that always makes me feel better!
It's a couple chicken breasts/thighs cooked. Set them aside.
Then sauteed: 1 large onion, 2-3 sliced carrots, 2-3 stalks celery with the leafy tops included. Set them aside.
Next I make a roux in the pan I sauteed everything in (after they've been taken out): melt a couple tablespoons butter in a pan and then add an equal amount of flour. Stir this together constantly and let it cook in the pan. It will brown up; as long as it's not burnt it's good.
Then gradually add your chicken stock or broth & stir in a little at a time. Probably about 6 cups? Not sure on the measurement. I just eyeball it.
I put the chicken (shredded or diced) back in the pot with the broth and add the veggies too.
Seasonings include:
a couple teaspoons salt (how much depends on if you used store-bought stock or homemade... store-bought needs less salt; sometimes I use half sea salt & half garlic or celery salt... just kinda depends on my mood...)
a teaspoon of pepper
a tablespoon of dried parsley
a teaspoon or two of each:
rosemary
thyme
herbes de provence
garlic powder (or I add a couple minced cloves to the veggies when they're nearly done sauteeing so it doesn't burn)
1-2 bay leaves
a pinch of crushed red pepper flakes
Then I stir in the orzo and simmer until it's all done. And that's it!

Such a delectable easy dish. Starting with a simple brown butter with lemon orzo, asparagus and topped with vegan feta.
Ingredients
12oz or orzo, cooked
1 bunch of asparagus, cut into bite sized pieces
1/4 cup of butter
1/3 cup of lemon juice
2 tbsp crushed garlic
1-2 cups of Vegan friendly chicken broth or vegetable broth
3 Tbsps of nutritional yeast (optional)
Freshly chopped parsley
1/2 cup of vegan feta crumbles
Salt and pepper
Fresh lemon slices
Directions
Heat a large frying pan over medium
Add in half your butter
Once melted, cook stirring often until butter starts to brown
Add in your garlic, lemon juice and 2 cup of broth
Mix well
Add in your asparagus
Cook for 2-3 minutes
Add in your cooked orzo
Season with salt and pepper
Mix well
Add in your remaining butter and nutritional yeast
Mix well
Stir in a handful of freshly chopped parsley
Plate
Top each plate with a little feta, fresh parsley and lemon
Serve and enjoy!

Lemon Chicken Orzo Soup is the ultimate comfort food! It tastes fresh and hearty at the same time and gives your belly kisses from the inside!

Ingredients ????
1 onion
2 cloves garlic
2 carrots
3 stalks celery
2 small chicken breasts (7oz each)
8 cups flavorful chicken broth
2 sprigs rosemary
3-4 sprigs thyme
3-4 sage leaves
1.5 cups orzo
1/2 cup frozen peas
sea salt
pepper
1 juice of whole lemon
parsley
Instructions ✏️
1. Peel and finely chop onion and garlic.
2. Peel and dice carrots and wash and dice celery.
3. Preheat a large pot over medium heat, once hot add a splash of olive oil and then sauté onions and garlic until translucent. Add diced vegetables and stir-fry until bright (about 5 minutes).
4. Add chicken breasts to pot and then pour broth over everything. Add herbs either loosely or in an herb infuser.
5. Bring everything to a boil and once boiling, put on the lid, reduce the heat to low and cook for 10-12 minutes or until the chicken breasts are cooked through to 165F internal temperature.
6. Remove chicken breasts from the soup and place on a cutting board.
7. Add orzo to the broth and cook for about 10 minutes or until al dente.
8. In the meantime, take two forks and shred the chicken breasts. Once the pasta is cooked, add the chicken back into the soup to reheat for about 1 minute.
9. Add frozen peas (they will defrost immediately in the hot broth).
10. Remove the herb infuser, add lemon juice, and taste test to see if it needs more seasoning with sea salt and pepper (this will depend on how flavorful your broth was).
11. Serve in a bowl, sprinkle with freshly chopped parsley, and enjoy!
