Filet mignon's flavor is more mild, and the meat so much more tender, so it can actually really benefit for a more gentle cooking in the oven. Here I show you how to sear the filet off in a cast iron pan to get a great crust exterior, and then finish it in a super hot oven, to get the center cooked to a perfect med-rare.
