How To make Broccoli Mushroom Scallop
1 1/2 lb Fresh broccoli, washed,
-split and cut into 2-inch -pieces or 10 oz Pk frozen broccoli spears
2 T Butter or margarine
1 c Sliced fresh mushrooms or
4 oz Can sliced mushrooms,
-drained 1 t Grated onion
2 T Flour
1/4 t Salt
1/8 t Pepper
1 c Milk
1 c Grated sharp Cheddar cheese
Paprika 1. Heat fresh broccoli in a deep, 2 1/2-quart, heat-resistant, non-metallic
casserole, covered, in Microwave Oven 8 to 9 minutes. (Note: If frozen broccoli spears are used, defrost and place in a shallow, 9-inch, heat-resistant, non-metallic baking dish.) 2. In a small, heat-resistant, non-metallic bowl, combine butter, mushrooms
and onion. Heat, uncovered, in Microwave Oven 3 minutes. Stir occasionally. 3. Blend flour and seasonings into butter-mushroom mixture. Heat,
uncovered, in Microwave Oven 3 minutes, stirring after 1 1/2 minutes. 4. Gradually add milk, stirring until mixture is smooth. Heat, uncovered,
in Microwave Oven 3 minutes. Stir every minute. 5. Pour hot mushroom sauce over cooked broccoli. Sprinkle with 1 cup cheese
and paprika. Heat, uncovered, 4 to 5 minutes or until cheese is melted.

Braised abalone, Fish Maw, Mushrooms with broccoli
Ingredient:
1.) A can of braised abalone
2.) 1 Broccoli
3.) Fish maw 28g
4.) Dried Shitake Mushrooms 18 Pcs
5.) 1 carrot
6.) Ginger 20g
7.) Garlic – few clove
Sauce:
1.) ShaoXin Wine 1 tbsp
2.) Oyster sauce 1 tbsp
3.) Light Soy sauce 2 tbsp
4.) White paper
5.) Salt to taste
6.) Water 400ml
1. Heat oil in medium heat, sauté the ginger and garlic clove.
2. Remove the fried garlic clove set aside
3. Add in mushroom, stir fry well.
4. Pour in Shaoxin wine and then add in oyster sauce and water stew for 20 minutes over low heat.
5. Add in fried garlic, carrots, broccoli stem and fish maw and bring to boil.

This is a very simple Chinese style vegetable dish that anyone can cook easily for a quick meal. I prefer to use fresh shiitake mushrooms but you can use any type of mushroom if you find the flavour of shiitake is too strong for you. Blanching broccoli quickly in boiling water gives it a more crisp tender texture and brings out its flavor and colour.

INGREDIENTS
1 broccoli head
9 scallop
9 mushroom
1 tbsp dried wolfberries
1 carrot
1 tsp chopped garlic
1 1/2 tbsp oyster sauce
1/2 tsp dark soy sauce
1 tsp light soy sauce
1 tsp sugar
250 ml water for braising
1 L water for blanching
1 tsp salt
1 tsp cornstarch
1. Cut broccoli into florets.
2. Peel the skin of a carrot and slice.
3. Soak mushrooms and dried wolfberries until soften.
4. Boil a litre of water in a pot. Add 1 teaspoon of oil and salt into the water. Blanch broccoli and carrot in boiling water for 2-3 minutes max.
5. Remove broccoli and carrot with a slotted spoon and plunge into a bowl of iced water. This helps to retain the freshness and colour of the vegetables.
6. In a wok, heat oil. Brown chopped garlic.
7. Add mushrooms.
8. Add 250ml water.
9. Flavour with oyster sauce, dark soy sauce, light soy sauce and sugar.
10. Cover the wok and simmer for 15 minutes.
11. Add scallop and continue to simmer for 1 minute.
12. In a bowl, mix cornstarch with a tablespoon of water. Pour into the wok and stir until sauce thickens.
13. Dish out onto the plate with the broccoli, leaving some sauce in the wok.
14. Add wolfberries into the sauce.
15. Pour wolfberries and sauce over mushroom and scallops. Arrange blanched carrot. Serve immediately.
