This broad bean soup recipe is a good way of using up late season, large, and potentially chewy beans.
Broad beans are full of protein, contain many important vitamins and nutrients, and have no saturated fat or cholesterol.
The recipe uses two strips of bacon for flavour, but as a vegetarian option, try substituting the bacon for sun dried tomatoes (and cook the same way).

If you don't think you like Broad Beans (aka Fava Beans) then try them like this: double podded with garlic and olive oil... because i think they are one of the most delicious things to come out of the garden at this time of year.
Its funny that so many people don't really like the beans even though they grow them but i want to change your mind. In this video i'm mainly showing how to prepare the beans by double podding them. From this point you can use them for all sorts of things - in pasta dishes, risottos, in soups , stews and bakes or as side for pretty much anything. They are wonderful!
But because i'm just trying to show the simple beauty of the fava bean (broadbean) i'm having them on buttered sourdough toast. Bliss. The most perfect vegetarian lunch or starter, or even a super healthy dinner.

Sea Salt
Olive oil
Feta cheese
Toast
