How To make Branding Iron Chili
3 lb Sirloin rough ground
2 lb Pork rough ground
4 c Stewed tomatos
3 Onions chopped
4 Jalapenos seeded &
-chopped 5 tb Cumin
3 tb Tabasco sauce
2 oz Sour mash whiskey
16 oz Beer
2 ts Salt
1 c Tomato paste
1/2 ts All spice
5 Garlic cloves minced
2 Bell peppers chopped
3 c Tomato sauce
2 tb Corn oil or peanut oil
Heat the oil in a large, cast iron skillet. Cook the meats, onions, garlic and Bell peppers until meat is browned and the onions are transluscent. In a large pot bring the beer and whiskey to a slow boil. Add the meat mixture, tomato sauce, tomato paste, and all spices except 1 T of cumin. Reduce the heat, cover and simmer for 1 hour stirring frequently. Remove the lid and cook for 30 minutes more continuing to stir frequently. Add the remaining cumin and serve. ***RECIPE***
Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.

Steve's Cowboy Chili
Ingredients
2 pounds 80/20 ground beef
1 pound 80/20 ground pork
2 Medium yellow onions, chopped
2 Red bell peppers, chopped
2 10 oz. cans Mild Rotel, drained
2 8 oz can tomato sauce
1 27 oz can kidney beans, drained
1/4 cup chile powder
1 tsp cumin
2 tsp oregano powder
2 tblsp smoked paprika
2 tsp salt
3 tsp minced garlic
1 Tblsp Cilantro, Chopped
32 oz Beef Broth * To desired consisetency, add more as needed.
Instructions
1. In a 14” Dutch oven brown the hamburger and pork over medium high heat.
2. Once meat is about halfway cooked, add onions and bell peppers.
3. Add all dry seasonings, to taste.
4. Cook until meat is slightly brown. Drain excess grease with ladle or large spoon if desired. Stir in remaining ingredients, adjusting if needed.
5. Cover and cook over medium-high heat until it comes to a rolling boil.
6. Reduce heat or remove from heat and simmer for 45 minutes, stirring occasionally.
Serve with:
Sour Cream, Chopped Green Onions, Shredded Cheddar Cheese
