2 Eggs,; well beaten
4 tb Sour milk
1/2 ts Salt
1/4 c Butter
Or butter substitute 1 ts Cinnamon
1 c Bran
1 c Flour
1/4 ts Baking soda
1/2 c Sugar
1 c Chopped raisins
Sift flour, measure, and sift with salt, baking soda, and cinnamon. Add bran. Cream butter and sugar. Add eggs. Beat thoroughly. Add sifted dry ingredients alternately with milk. Add raisins. Mix thoroughly. Drop by teaspoonfuls onto well-oiled baking sheet. Bake in moderate oven (400 F) about 20 minutes. 20 servings. -----

Ingredients
* 3/4 cup (100 g) whole wheat flour
* 3/4 cup (80 g) rolled oats, measure and grind to a flour
* 4 tablespoons (56 g) cubed and frozen unsalted butter
* 1/2 cup (70 g) tightly packed brown sugar
* 3 tablespoons cold milk
* 1/4 teaspoon baking soda
* 1/4 teaspoon salt, skip if using salted butter
* 1 tsp vanilla extract
Instructions
* In a mixing bowl add the whole wheat flour, baking soda oat flour, brown sugar and salt. Whisk well to incorporate everything well.
* Add frozen and cubed butter, work the butter into the flour with your fingertips to resemble breadcrumbs.
* Add milk and knead until you have a dough. You may need more or less of milk, so add it gradually. Do not overwork the dough. Just knead until the dough comes together.
* Flatten the dough into a disc and wrap it to a cling film. Refrigerate for about 15 minutes.
* Preheat the oven to 350 degrees F/ 180 degrees C. Transfer the disc to your work surface. Place it between two parchment papers and roll out to 1/4 inch thickness. If it crumbles, accumulate it and roll out. Use of parchment paper will help you roll it out nicely.
* Use a cutter to cut into desired shapes.
* Transfer to a baking tray lined with parchment paper. Gather the scraps, form a disc, and repeat the same procedure of rolling out and cutting it out until all the dough is used up.
* Use a skewer/fork to poke holes all over the cookies.
* Bake for 15 minutes, until the cookies are a light golden in color. Check after 10 minutes of baking, as the time taken to bake will depend upon the thickness of the cookies, if they are thinner, they will be done around 10 -12 minutes. I baked in two batches, kept the other batch in the refrigerator while the first was baking.
* Remove the tray from the oven. Let it cool for a minute on the tray, then transfer to a wire rack, and let it cool completely. They will become crisp and crunchy on cooling, transfer to an airtight container.

INGREDIENTS [ 1 cup 200 ml ]
Wheat bran – 1/2 cup
Wheat flour – 2 tbsp
Maida – 2 tbsp
Fine rava – 1 tbsp
Brown sugar – 4 1/2 or 5 tbsp
Ghee – 5 or 5 1/2 tsp or as reqd
Cinnamon pwdr – 1/2 tsp or 3/4 tsp
Baking soda – a pinch
Baking tray greased
*** instead of wheat bran ,you can use whole wheat flour .
PREPARATION
Keep all ingredients ready before you start
Wheat bran is the residue left after sieving wheat flour after grind wheat .
Take brown sugar in a mixie jar and blend it into fine pwdr
Mix wheat bran + wheat flour + maida + fine sooji + brown sugar pwdr + cinnamon pwdr + baking soda in a big plate.
*** if you want strong flavour of cinnamon ,then add upto ¾ tsp .I added 1/2 tsp.
METHOD.
Take ghee in a mixie jar and blend well till creamy .
Add the flour mixture to it and blend well .
Transfer the mixture to a plate and knead it into a soft dough .
*** Adjust ghee or flour to make a smooth dough .[ for me it took 5 1/2 tbsp – not oily dough ]
The dough should hold its shape.
Divide the dough into equal portions .[ 15 ]
Roll each portion into a smooth ball and give it any shape .
Arrange it on a baking tray .
Preheat the oven at 180 *
Bake the nankhatais at 180 * for 20 – 22 mins till done .
Chk after 18 mins . [don’t burn it ]
**** If it slides easily without sticking at the bottom of the tray it means its done.
Allow it to cool for 10 minutes.
Store it in an airtight container.
** You can bake it in pan /kadai /cooker.
NOTES
Quantity of ghee depends on quality of flour so adjust accordingly .
First add less ghee, if reqd add more .
Check after 15 minutes if the cookie is become fluffy and the bottom of it has turned brown. if not then again bake for 3 – 4 mins.
If there is excess ghee then the cookies may not become fluffy. Then you can add little more flour and knead it.
If there is less ghee the cookies may break.
The flour should be of room temperature.
The dough should hold its shape.
If you feel you have added extra ghee then add little more flour.
How to make whole wheat biscuits at home

Ingredients:
- 100gms Wheat flour
- 40gms bran
- 30gms desiccated coconut
- 40gms oats
- 90gms sugar
- 90gms butter
Method:
1. Combine all ingredients and mix until dough forms.
Add milk if the dough is too dry.
2. Roll dough out on floured surface; cut with a biscuit cutter. (3/4 inches)
3. Place biscuits on a greased baking tray or butter paper.
4. Bake in preheated oven until lightly browned, 25-30 minutes.
