Bourbon Ball Candies
These boozy delights don't require any baking and very little time. If you want to make them without the alcohol, simple refer to the cook's note at the bottom of the recipe.
Ingredients:
1 1/2 cups crushed vanilla wafer cookies
2 cups confectioners' sugar
1 1/2 cups walnuts, chopped
1/4 cup cocoa powder
3 TBSP light corn syrup
2-3 TBSP bourbon
Water
Add all ingredients to the bowl, except for the water.
Stir until well incorporated
Add enough water to hold mixture together (about 2 TBSP)
Using your hands, roll into 1 inch balls, rinsing hand occasionally if balls become hard to roll.
Place in an airtight container for 1-3 days.
When ready to serve, roll each ball in powdered sugar.
Cook's Note: For alcohol-free candies, replace the bourbon with 2 tsp of rum extract and use extra water to get the right consistency.

Bourbon Balls With Right On The Mark - Cooking With The Lovely Kim

Bourbon Balls Recipe:
12 oz package of Vanilla Wafer Cookies (for gluten free I used a GF shortbread cookie)
12 oz package of Nestle's semi-sweet chocolate chips
1/2 c. granulated sugar
1/3 c. light corn syrup
2/3 c. bourbon or whiskey (you can also use rum)
1 c. walnuts
Additional granulated sugar, powdered sugar, crushed nuts or flax seed to roll the completed balls
Crush cookies in a food processor until they are a bread crumb consistency
In a large microwave safe mixing bowl or large measuring cup, melt the chocolate chips in the microwave for 30 sec. stir and continue at 30 sec intervals until completely melted. Mix in the corn syrup, sugar and liquor into the melted chocolate chips until completely combined. Add cookie crumbs a little at a time mixing well until all ingredients are well mixed together. Let mixture sit for 30 minutes to marry (15 min. is sufficient for 1/2 batch). The mixture will have a fudge-like consistency when it is time to roll. Roll mixture into 1 inch balls and roll into sugar, nuts or flax seed. This will keep the balls from sticking together in your container. Place on cookie sheet lined with parchment paper and flash freeze or place in refrigerator for 15 minutes. Store in air tight container. A full batch will make about 48-60 balls depending on how large you roll them.

Betty's Vanilla Wafer Bourbon Balls
Betty demonstrates how to make Vanilla Wafer Bourbon Balls. Bourbon Balls are a traditional sweet treat in Kentucky. Below is a recipe where all ingredients are halved, making about 2 ½ dozen small Bourbon Balls.
Vanilla Wafer Bourbon Balls
1 ¼ cups vanilla wafers, crushed (Measure after crushing.)
1/2 cup confectioner's sugar
1 tablespoon cocoa
½ cup chopped pecans
¼ cup Bourbon whisky
1 ½ tablespoons Karo light corn syrup (You may substitute another syrup here.)

Crush vanilla wafer until fine, and then measure. Mix 1 ¼ cups vanilla wafer crumbs with 1/2 cup confectioner's sugar and 1 tablespoon cocoa. Add ½ cup chopped pecans. Set aside. Blend together ¼ cup Bourbon whisky and 1 ½ tablespoons corn syrup, then mix into crumb mixture. Form into teaspoon-sized balls and roll in confectioner's sugar. Place in a serving dish, cover with plastic wrap, and refrigerate until set. You may store these in a tightly-covered container for several days before serving.
