5 pounds stew beef
cut in 2" cubes

2 large carrots, sliced
1 cup sliced celery

1 teaspoon freshly ground black pepper
3/4 teaspoon salt
3/4 teaspoon thyme
2 bay leaves
2 1/2 cups dry red wine

1 saddle of lamb (2 kg)
1 shallot
20 gr butter
3 dl meat juice

3 garlic cloves
1 green cabbage
300 gr mushrooms
200 gr cooked chestnuts
5 cl sunflower oil
1 onion
300 gr red kuri squash
100 gr celery
1 thyme sprig
For the stuffing
200 gr chicken breasts cut into small pieces
1 egg white
2 dl fresh cream
50 gr parsley and chopped tarragon
Salt, pepper
For the vegetables

1 green cabbage
300gr mushrooms

300gr red kuri squash
