How To make Bockwurst Braised In Ale with Homemade Sauerkraut
3 Bottles Good, Heavy Ale
2 Bay Leaves
6 Whole Cloves
1 Tablespoon Brown Sugar
Salt And Fresh Ground Pepper To Taste 2 Pounds Fresh Bockwurst Or Other White Sausage
4 Cups Fresh Sauerkraut, Preferably Homemade (Rec
1 1/2 Cups Apple Juice Or Cider
1 tsp Whole Caraway Seeds
Salt And Pepper Honey Beer Mustard (Recipe Follows)
=20 Add ale, bay leaf, cloves, sugar, salt and pepper to a saucepan and simmer for 3-4 minutes. Add bockwurst and simmer slowly, covered, for 4-5 minutes or until warmed through and plump.
Drain sauerkraut and rinse, if it is too strong. Add to a non-reactive saucepan along with apple juice, caraway seeds and salt and pepper to taste. Simmer slowly, partially covered, for 20-30 minutes or until most of the juices are absorbed.
To serve: Mound sauerkraut on warm plates and top with steamed bockwurst and a big dollop of homemade Honey Beer Mustard.

All my recipes are in grams per kilogram g/kg
To get from kg to lb divide by 2.2045 eg 5kg/2.2045 = 2.27lb
Bratwurst
Salt 18g/kg
White Pepper 3g/kg
Nutmeg 1g/kg
Ginger 0.5g/kg
Caraway 0.75g/kg
Binder 10g/kg
Cold water, Milk or Cream 100ml/kg
*Binder can be substituted for eggs at 2 eggs/kg*

Ingredients and Directions:
Preheat oven to 250
2- 16oz packages of Sauerkraut (we used boars head)
1 - 16oz package of uncured beef knockwurst sliced (we used boars head)
1 medium onion coarsely chopped
3 ribs of celery coarsely chopped
1 apple cubed (we used honey crisp)
1/2 cup of red wine (or beer or white wine)
1/2 brown sugar
1/2 cup of apple cider vinegar
Approx. 16oz of vegetable broth
1-2 TSP of liquid smoke (we used hickory)
1 TSP Garlic powder
1 TSP Caraway seeds
1 TSP of salt and pepper
Mix all together in a roaster, stirring all ingredients together to mix well
Bake in 250* oven for 3 hrs, stirring halfway through.
