How To make Blueberry Banana Muffins
1 1/4 c Sugar
2/3 c Butter (Land O Lakes)
1/4 c Buttermilk
2 Eggs
1 t Vanilla
3 md Ripe banana (2 cups)
2 c All-purpose flour
3/4 ts Baking soda
1/8 ts Salt
1 c Fresh/frozen blueberries
Heat oven to 350. In larger mix bowl, combine sugar, buttermilk, butter, eggs and vanilla. Beat at medium speed, scraping bowl often until creamy (1-2 min). Add flour, baking soda, and salt. Beat at low speed until moistened (1-2 min). By hand, stir in blueberries. Spoon into paper lined muffin cups. Bake for 25-30 min. or until toothpick inserted into the center comes out clean. Blueberry Muffins + The Difference Between Baking Soda and Baking Powder
Blueberry Muffins (yield: 6 large or 12 standard muffins)
2 1/4 c (315g) AP flour
3/4 c (150g) sugar
1/4 c (53g) brown sugar
2.5 tsp (12g) baking powder
1 tsp (6g) fine salt
2 eggs
1/3 c (66g) vegetable oil
4 oz (57g) butter, melted
3/4 c (170g) whole milk
1 tsp (5g) vanilla extract
1 1/4 c (205g) fresh or frozen blueberries
1. Mix all the dry ingredients together in a bowl.
2. In a separate bowl, whisk all the wet ingredients together until combined.
3. Mix the dry and wet ingredients together and stop mixing as soon as you can't see any dry flour. If there are some small clumps, that is ok.
4. Gently fold in the blueberries.
5. Divide between 6 large muffins or 12 standard size muffins.
6. Top the muffins with a generous sprinkling of coarse sugar (turbinado, demerara, or sanding).
7. Bake at 375F for 15-20 min for standard muffins or until a toothpick inserted in the center comes out with wet crumbs.

I make these easy Banana Blueberry Muffins for my children to grab for breakfast or as a quick snack after school. It is relatively low in added sugar (sucrose or table sugar, for science folks) and filled with wholesome fruits - bananas and blueberries. I hope you enjoy this recipe! Ingredients:
3 large (310 mL) mashed ripe bananas (or thawed frozen)
1 large egg at room temperature
1/2 cup (100 g) light packed yellow sugar
1/3 cup (90 mL) melted coconut oil, or vegetable oil
1 tsp pure vanilla extra (optional) - add to liquid mixture, if using
1 1/2 cups (200 g) all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp coarse salt (if fine salt, use less)
1 cup of fresh (or unthawed frozen) blueberries
12 large or jumbo size muffin liners
Bake at 350 degrees F or 180 degrees C for about 18-22 minutes (or until inserted skewer comes out clean).
Ps. Dark baking pan may require less baking time.

3 grosses bananes mûres (310 ml) écrasées (ou décongelées congelées)
