How to Make Savoury & Sweet Blintzes Video Recipe cheekyricho
Video Recipe and Cooking Demonstration For Home Made Sweet and Savoury Blintzes. You know those days when he wants savoury and you want sweet. This is the perfect compromise. 2 completely different dishes with the one recipe. Cook and serve them at once. Everybody's happy. How Perfect! Do give it a try, you will be glad you did.
INGREDIENTS:

300 grams cottage cheese (cheekyricho ricotta cheese is a good substitute youtube.com/watch?v=pEY_f28LmRs)
3 eggs
70 grams mascarpone cheese (cream cheese is a good substitute)
For Savoury you will need:
15 grams cooked chopped bacon
1 large spring onions sliced thinly on the diagonal ( keep a few for garnish)
a sprig of parsley coarsely chopped
Vege Salt and cracked Pepper to taste
For the Sweet:
1/2 banana sliced
20 grams honey
good pinch of cinnamon and the raspberry sauce.
For the Raspberry sauce:
75 grams frozen or fresh raspberries
1 teaspoon icing or confectioners sugar
1/2 teaspoon potato flour.
METHOD:
Raspberry sauce.
Combine ingredients and microwave on high power 20 seconds stir and cook a further 20 seconds on high. The fruit should be intact and and the sauce should be thickened to a spooning consistency. Set aside.
For the Cheesy custard base:
Combine both cheeses and eggs then divide mixture into two.
For the Savoury Blintze:
Mix the bacon, most of the spring onions, vege salt and cracked pepper with half of the cheesy mixture and lay some of the mixture onto your crepe. Fold it up like a fish and chip packet and lay in a lightly greased pan over medium heat. Place the lid on the pan and after a couple of minutes turn over to brown the other side. with a quinnelle of Marcarpone cheese and sprinkle of cracked pepper,remaining spring onions with sliced tomatoes(optional) serve immediately.
For the Sweet:
To the remaining cheese mixture add banana, honey and cinnamon. Place some on the crepe and roll up like a fish and chip packet and fry both sides, a couple of minutes until crispy brown. Serve with a quinnelle of mascarpone and sprinkle of icing(confectioners) sugar and warm raspberry sauce. Serve immediately. This dish is also perfect as a light dessert.

EASY RASPBERRY SAUCE! RASPBERRY COULIS RECIPE! KITCHEN BASICS!
Today we are sharing a gourmet kitchen basic! This is the kind of thing that looks super fancy schmancy but in reality is super simple. When you watch your favorite chef cooking on television they whip out that squeeze bottle with raspberry coulis and dress the dessert plate. This is that! Coulis is nothing more than a fancy name for sauce. A puree of fresh fruit that has been sweetened. Today I am unraveling the mystery and giving you the goods on raspberry coulis.
Your friends are going to think they are fine dining when you bring out this delicious sauce. Coulis is a staple of french desserts and it could not be simpler than this! Keep in mind, I am using raspberries, but don't let that limit you! You can make this sauce out of virtually any soft fruit or berry. Raspberries are great, but so are strawberries, blueberries, blackberries and even cranberries. Peaches, plums and nectarines will work great as well.
I have started with 2 cups of fresh raspberries that were washed and patted off with paper towels. I tossed them into my drink blender with 2 tablespoons of lemon juice and 1/4 cup of powdered sugar. The sugar will be determined by the sweetness of your fruit. So be sure to taste your fruit first and adjust the sugar levels to your liking.
Blend all of this together until well pureed. Then pour into a fine mesh sieve over a saucepan. Using a spoon to work the mixture back and forth to prevent any seeds from making their way into the sauce. Be sure to scrap the bottom of the sieve to be sure and get every drop of goodness into the pot!
Now you will want to bring this to a rolling boil, over medium high heat, stirring occasionally so the mixture doesn't scorch. When you reach a rolling boil, which is a boil that cannot be stirred down, remove from the heat and allow to cool. Transfer to an airtight container or a squeeze bottle with a seal and refrigerate. You will want to use this within a weeks time before it begins to turn, ferment or oxidize.
So that's how easy it is to make raspberry sauce or if you're being fancy raspberry coulis. This is great to have on hand to mix into cocktails, drizzle over ice cream or dress a plate for chocolate cake! You can use this to amp up your strawberries for shortcake or to blend into a smoothie. Give it a try! I know you will love it!
