BEST Strawberry-Rhubarb Pie (my secret ingredient)
Strawberry-rhubarb pie is our favorite pie…especially since I started adding the secret ingredient.
Recipe:
[Crust]
2 cups flour
1 ¾ sticks cold butter, cut into small chunks
A pinch of salt
6-8 TBS ice water
[Filling]
2.5 cups hulled strawberries, sliced in half
2.5 cups rhubarb, cut into bite-sized chunks
1 cup sugar
A pinch of salt
¼ cup cornstarch
1 tsp green cardamom seeds
2 tbs butter, cut into tiny pieces
Bake at 425 towards the bottom of the oven for 30 minutes. Lower temperature to 350 and bake for an additional 25-35 minutes (until pie is done.)

Strawberry Cobbler with Pie Crust ????????????????| Easy Homemade Dessert! ????????
Strawberry cobbler with pie crust is an easy and delicious old fashioned dessert that you and your family will love. Many easy cobbler recipes are dump cake style, so the crust is light and fluffy like a cake. Although those are definitely good, I really like the texture of pie crust, so I decided to create a southern style strawberry cobbler with pie crust recipe with dumplings, pieces of pie dough cooked inside of the fruit filling, not just either on the top or bottom of the cobbler. Many people would expect the dumplings to be soggy or rubbery, but they are the exact opposite. Instead, the dumplings are soft and plump, creating a delicious contrast with the crispy crust on top of the cobbler.
In addition to the texture, the flavor of this strawberry cobbler is delicious as well, the lemon in the background really making the berry flavor pop. This dessert has just the right amount of sugar, so it isn't too sweet; in fact, it is perfect either on its own or with a scoop of ice cream--or two, or three...
Best of all, this cobbler is super easy since it uses frozen strawberries, so there is no prep work involved. I always use homemade pie crust, but you could definitely use Pillsbury or any other storebought dough as well.
Like I said, this strawberry cobbler with pie crust is absolutely amazing. In addition to the flavors and textures, the color is amazing, too: the filling turns a vibrant, eye-catching red, one of the deepest, brightest shades of red I have ever seen in all my life.
With that said, you should definitely give this recipe a try. Besides it has summertime fruit and is a beautiful shade of red, it would be perfect for the 4th of July, Canada Day, Memorial Day, Labor Day, a barbecue, or since it is made with frozen strawberries, even Christmas. No-Bake Strawberry Pie
No-Bake Strawberry Pie is an easy no-bake summer dessert, very light and flavorful that can be prepared in less than 30 minutes. If you like strawberries and Oreo cookies this pie is a perfect dessert for you.

Ingredients
Makes about 8-10 servings
Oreo Crust
9 oz (250g) whole Oreo cookies
6 tbsp (80g) butter, melted
Strawberry Filling
7 oz (200g) fresh strawberries
1 1/2 tbsp (7g) gelatin powder
3 tbsp (45ml) cold water
1 1/4 cups (300g) whipping cream
2/3 cup (80g) powdered sugar
1 tsp (5g) vanilla extract
3.5 oz (100g) fresh strawberries, halved and sliced
Prepare the crust: Place oreo cookies into the bowl of a food processor and blend until crumbs form. Add melted butter and pour over the crushed cookies. Process until evenly moistened. Press cookie mixture with the back of the spoon and your fingers where necessary, onto the bottom and sides of a round 8-9 inch (20-23 cm) pie pan. Refrigerate until you prepare the filling.
Prepare strawberry filling. Puree the strawberries using a blender. Set aside.
Dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the strawberry puree and mix to combine.
In a large bowl whip cream until thickened. Add vanilla and powdered sugar and continue whipping until stiff.
Gently fold in the gelatin and strawberry puree mixture and incorporate sliced strawberries.
Pour the strawberry filling over the crust and smooth the top.
Refrigerate to set for few hours or overnight.
Before serving decorate as desired with fresh strawberries and oreos. Enjoy!
