How To make Black Bean Chili Burgers
1 c -Water
1/2 c Quinoa; rinsed
2 c Black bean flakes
1 1/2 c -Boiling water
2 ts Chili powder
1 ts Ground cumin
1/2 c Fresh cilantro, chopped
2 Green onions; chopped
1/2 c Red bell pepper, chopped
1/2 c Plain bread crumbs
3/4 ts Salt
2 ts Vegetable oil
OPTIONAL GARNISHES:
2 c Lettuce; shredded
1 c Grated lo-fat cheddar cheese
-OR cheddar-style soy cheese 1/2 c Nonfat sour cream
1 c Bottled salsa
Avocado; diced Ripe olives, sliced Green onions; chopped Bring 1 cup water to a boil in a small saucepan. Add quinoa, cover and simmer 15 minutes. Place black bean flakes in a medium-sized bowl. Stir in boiling water. Cover and let stand 5 minutes. Combine 1/2 cup cooked quinoa with black beans, chili powder, cumin, cilantro, green onions, red bell pepper, bread crumbs and salt. Mix well. Lightly flour hands and divide mixture into six equal balls. Flatten each ball into a 1/4-inch-thick cake. Heat oil in a nonstick skillet. Cook each bean cake about 2 minutes each side. Serve topped with lettuce, cheese, nonfat sour cream, salsa and other garnishes, as desired. Black Bean Veggie Burgers Recipe (serves 4)
In a mixing bowl, add and toss
1/4 cup olive oil
2 sliced sweet potatoes
1 tsp garlic powder
2 tsp chili powder
1 tsp kosher salt
Place on a pan lined with aluminum foil, skin-side down, bake at 375º F for 20-25 minutes until crispy.
in a pan saute
1-2 tbsp olive oil
1/2 finely chopped onion, saute 1 min, then add
1/2 cup grated carrots
1/4 cup grated zucchini
2 cloves minced garlic
pinch of salt
saute together, set aside.
In a large mixing bowl add 1 can of black beans (non rinsed), mash until a paste forms, add 1 more can of beans, mash lightly to preserve texture and color.
Add the cooked vegetable
2 tsp chili powder
1 tsp cumin
1 egg
1/2 cup oat flower
1 tbsp chopped cilantro
1 tsp kosher salt
mix until the batter forms. Mold into patties, fry in a hot cast iron pan, 5 minutes each side.
Serve on favorite bun with condiments.

Black Bean Chili Burger
1 can black beans, drained and rinsed
1 red bell pepper, chopped
1/2 red onion, chopped
1/3 cup plain breadcrumbs, plus more if needed
1 tablespoon chili powder
1 egg
2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil, for pan
1 whole-wheat hamburger bun
Shredded cheddar cheese
Sour cream
Minced red onion
Sliced scallion
Sliced tomato
Sliced pickles
1.Preheat a non-stick pan lightly coated with a thin layer of vegetable oil to medium-high.
2.Puree black beans, red bell pepper, onion, breadcrumbs, chili powder, egg, salt and pepper in a food processor until a smooth paste forms. Add more breadcrumbs if needed for mixture to hold together. Shape into patties. Cook patties 3 minutes per side or until a dark crust forms on each side. Remove to bun and add your favorite toppings.
