The Best Whole Wheat Biscuits

THE RECIPE:
Ingredients:
2 cups (240gr) Whole Wheat Pastry Flour plus more for the surface and biscuit cutter
2 teaspoon (8gr) baking powder
½ teaspoon (2gr) baking soda
½ teaspoon (3gr) kosher salt
6 tablespoons (85.2gr) very cold unsalted butter
¾ cup buttermilk cold
Instructions:
1. Cut butter into small 1-inch cubes, place in a bowl and keep it in the freezer while you are preparing the rest of the ingredients.
2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
3. Add in the cold butter cubes into the mixture. Using a pastry cutter or a fork, work the butter into the flour just until it resembles coarse crumbs.
4. Pour in the buttermilk. Using a wooden spoon or your hands, mix until combined.
5. Transfer the dough onto a lightly floured surface. Gently work the dough to make it cohesive using your hands without overworking it. If it is too sticky add in some flour.
6. Once the dough is cohesive, pat it out into a rectangular. Fold it in thirds and gently flatten. Rotate the dough 90 degrees and fold it again. Repeat the same process for one more time. Using a rolling pin, roll the dough into a rectangle that is 1 ¼ inch thick in height.
7. Dip a 2 ¾ inch round cutter into flour and then press it straight down into the dough. Transfer the biscuit onto a parchment-lined baking sheet with at least 1-inch space in between biscuits. If you need it, dip the biscuit cutter in flour in between.
8. Repeat until you have 8 biscuits. *Read the post to what to do about the leftover dough.*
9. Place the biscuits in the freezer and preheat your oven to 450 degrees.
10. Bake in the oven for 12 minutes or until the top of the biscuits turn lightly golden brown.
11. If preferred, lightly brush them with butter as soon as they come out of the oven. Serve them while they are still warm.

Ingredients:
Wheat Flour: 2 Cups
Salt: a pinch
Cardamom Powder: 1/2 a Teaspoon
Ghee: 1 1/2 Tablespoon
Milk: 1/2 Cup (lukewarm, water can also be used)
Oil: needed for deep frying
Method of Preparation:
Take 2 cups of Wheat flour in a mixing bowl, add a pinch of salt to it & 1/2 a Tsp of Cardamom Powder.
Mix them all well, add 1 1/2 Tablespoon of melted Ghee to the flour. Mix thoroughly.
To another mixing bowl add 1/2 a cup of lukewarm milk, add 1/2 a cup powder sugar.
Mix until sugar melts, instead of milk water can also be added.
Now, to the flour bowl add the Milk mixture slowly and knead it into a fine dough.
Let it sit for 5 Minutes.
After 5 Min, make 4 portions of the kneaded dough.
Take a portion of the dough and pat it once in the dry flour.
Roll it into a roti, with moderate thickness.
Cut off the edges of the Roti.
Cut the roti into desired shapes and place them all aside for a while.
Heat oil in a pan required for deep frying the biscuits on medium flame.
Slowly drop the biscuits in the oil on low flame.
Fry them all on low-flame only on either side, until golden brown.
They may look soft as soon as we take them off the oil.
But when the biscuits cool down they become crisp.

Take as many as you can… It has the goodness of wheat flour with that aromatic whiff of green cardamom. It’s simply wonderful.
ATTE KI NANKHATAI
Ingredients
1¼ cups whole wheat flour (atta)
¾ cup melted ghee
1 cup powdered sugar
¼ cup gram flour (besan)
¼ cup semolina
½ tsp green cardamom powder
Slivered pistachios to sprinkle
Slivered almonds to sprinkle
Tea for serving
Method
1. Preheat the oven at 180°C.
2. Take melted ghee in a bowl. Add powdered sugar and mix till sugar dissolves.
3. Add whole wheat flour, gram flour, semolina, green cardamom powder, baking powder and mix well to form soft dough.
4. Divide the mixture into equal portions and flatten slightly. Arrange on a baking tray.
5. Sprinkle almonds and pistachio slices on top and press slightly. Bake in preheated oven for 10-15 minutes.
6. Allow to cool.
7. Store in air tight container or serve with tea.

Welcome back, y'all! I'm super excited to finally show you my soft and fluffy biscuit recipe using 100% freshly milled wheat. No white flour needed! My husband has told me he likes this just as much, if not better, than Hardee's biscuits which is saying something! They are soft, fluffy, and PERFECT for biscuits and gravy or...really...with anything.
This recipe has been modified from Jill Winger of The Prairie Homestead's biscuit recipe. Thank you so much, Jill, for a great recipe I was able to springboard off of! Only a few tweaks were needed to make it work for freshly milled wheat.
