How To make Biscotti Di Pignoli
2/3 c Pine nuts
1/2 c Butter
3/4 c Sugar
2 Eggs
2 tb Lemon juice
2 tb Lemon zest
2 c Plus 2 Tbs unbleached or
-all-purpose flour, 1 1/2 ts Baking powder
1/4 ts Salt
Place nuts in a shallow pan and bake in a 180C/350F oven for 6 to 8 minutes or until golden brown. Let cool. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, lemon juice and zest. In a bowl, combine the flour, baking powder and salt. Add to the creamed mixture, mixing until blended. Fold in nuts. Divide dough in half. On a greased and floured baking sheet pat out into two logs about 1/2 inch high, 1.5 inches wide and 14 inches long, spacing them at least 2 inches apart. Bake in the middle of a 170C/325F oven for 25 minutes or until lightly
browned. Transfer from the baking sheet to a rack. Let cool for 5 minutes. Place on a cutting board. With a serrated knife slice diagonally at a 45 degree angle about 1/2 inch thick. Lay the slices flat on the baking sheet and return to the oven for 10 minutes longer, turning them over once, to dry slightly. Let cool on a rack. Store in a tightly covered container. These cookies keep well. Makes about 3.5 to 4 dozen.

A little about me i am a transplant patient and i almost died and my wife saved my life she is a nurse, i had the bad luck of being born with a fatty liver and it went on me a few years ago, After the operation i had to learn how to speak, walk and learn how to do just about everything all over again it took time but i am able to cook again. Recipe:
all-purpose flower
8-ounce almond paste
1/2 white sugar
1/2 cup confectioners' sugar
4 egg whites divide two and two
1/2 cup pine nuts
cooking spray
Directions:
preheat the oven to 325 degrees
take 2 cookie sheet and put parchment paper and spray it with nonstick.
put the almond paste in the food processor add the sugar and blend together. add the 2 egg whites blend in then add the 1l2 cup of confectioner's sugar blend it all well then done.
now have flour in a bowl the two other egg whites and pine nuts ready.
put flower on fingers on both hands make about a 1 inch ball of the mix
dip in the egg white and then dip into the pine nuts and place on tray.
repeat process until you done them all.
place them in the oven for 15 to 18 minutes
take them out let them sit for 30 minutes
you can add on top confectioner sugar if you like.

1lb Pine Nuts
Directions: Preheat oven to 350. Combine almond paste, egg whites, and sugar for 2-min in mixer. Using a small cookie scoop (or spoon), form 1.5 balls and roll completely in pine nuts. Place 12 per tray, gently push with bottom of cup prior to baking. Bake for 14-16min, until slightly golden. Enjoy!
