Pinoli Cookies Recipe | Pignoli Cookies | Pinoli Cookies
Ingredients:- (For 44 cookies)
1 pound of almond paste (454 grams)
2 cups granulated sugar (450 grams)
4 egg whites at room temperature
Zest of a lemon
1 cup or more of pine nuts (200 grams plus)
Directions:-
Step#1- In a food processor add the almond paste and pulse to a crumble.
Step#2- Add half of the sugar and pulse until well combined.
Step#3- In a separate bowl combine the rest of the sugar and egg whites.
Step#4- With an electronic mixer mix until gently whipped and white. Grate your lemon peel in and add the almond mixture, continue mixing till the dough becomes sticky.
Step#5- Place pine nuts in a shallow pan.
Step#6- Fill a small bowl with cold water, wet the palm of your hands with water, grab a small amount of dough, and form a ball. Roll in the pine nuts and place them on a parchment paper-lined cookie sheet.
I like to roll the top and bottom for extra pine nuts. The above-listed ingredients make about 44 cookies.
Bake at 325 degrees Fahrenheit for about 22 to 25 minutes.

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?

Pignoli Cookies Recipe
makes about 3 dozen
Ingredients:
10 oz almond paste
½ cup sugar
4 large egg whites, divided
1 cup confectioners’ sugar
2 cups pine nuts
Directions:
1. Beat the almond paste and sugar in a bowl until combined.
2. Beat two egg whites into the almond mixture.
3. Gradually add the confectioners’ sugar to the almond mixture and mix thoroughly to make dough.
4. Whisk the remaining two egg whites in a separate bowl until the egg whites are foamy.
5. Dip your fingers into the flour to keep the dough from sticking to your fingers. Shape the dough into 1-in. balls, dip the balls into the egg whites, and coat each ball in the pine nuts.
6. Place the balls on two parchment paper-lined Air Flow Racks and flatten each ball slightly.
7. Place the Racks on the bottom and middle shelves of the PowerXL Air Fryer Oven.
8. Press the Power Button, decrease the cooking temperature to 325° F, and increase the cooking time to 18 mins. Rotate the Racks halfway through the cooking time (9 mins.).
Eric’s Tip: If pine nuts are not available or too expensive, you can
substitute slivered blanched almonds.
