How To make Biscotti Di Consuolo (Consolation Biscuits)
2 c All-purpose flour
1/4 ts Salt
1 1/2 ts Baking powder
1 lg Egg
1/2 c Honey
1/4 c Mild olive oil; or
-melted butter Although these biscuits have an unhappy association, they are tender and tasty. The name refers to the time during which a bereaved family receives callers and serves them these biscotti with a glass of wine. In Campania and the Basilicata, these customs survive in out-of-the-way mountain villages that still cling to ancient traditions. Combine the flour, salt, and baking powder in a mixing bowl. Combine the egg, honey and olive oil or butter in a bowl, beat to mix, and pour into the flour mixture. Stir well to form a firm dough. Remove the dough from the bowl to a floured surface and knead well, about 2 or 3 minutes. Flour the dough lightly, wrap in plastic, and allow to rest at room temperature about 1 hour. Unwrap the dough, cut it into 12 pieces, and roll each piece into a rope about 1/4 inch in diameter x 12 inches long. Divide each rope into three pieces. Join the ends and form each piece into a figure eight, making sure that the seam lies at the midpoint of the figure eight and underneath it. Transfer the biscotti to parchment lined cookie sheets and bake them in a preheated 350 degree oven for about 10 minutes, until puffed and light golden. Avgolemono recipe:
1.5 liter chicken or vegetable broth
250g shredded chicken (boiled)
1 cup of rice
2 carrots
3-4 celery stalks
1 onion
4 gloves garlic
1-2 lemon - juice (personal preference whether you like sour soup or not)
2 egg yolks or whole eggs (tempered)
Butter cookie recipe:
220g butter
250g all-purpose flour
1 egg
75-100g of powdered sugar (personal preference in sweetness)
Half cup almonds and some sesame seeds.
Baked in the oven for 12-20 minutes at 180c

For this recipe you will need:
- 1 can Pillsbury biscuits
- 3 cups vegetable oil (or any flavorless high-heat tolerance oil)
- 1/2 cup granulated sugar
- 1/2 tbs. ground cinnamon

Quick & Easy Matka Kulfi | Using Marie Biscuits
Beat The Summer Heat! Cool yourself with some quick and easy Matka Kulfi :) A rich, dense, creamy dessert in a bowl that can bring you comfort at the first bite. And, it's not much work— a perfect recipe for these hot months!
This recipe serves 4
Ingredients:
10 Cashew nuts
10 Almonds
10 Marie Biscuits
5 Tablespoons Milk Powder
500 ml Milk (toned)
5 Tablespoons Sugar
A pinch of Salt
1/2 teaspoon Cardamom
5 Tablespoons Fresh Cream
You may substitute Marie Biscuits with Digestive biscuits if you like, but use 6-8 biscuits instead of 10. It may get too thick otherwise.
You may skip the cream if you're using full-fat milk.
The Kulfi should be covered and frozen for 5-6 hours or overnight. Before serving, leave it at room temperature for 10-15 minutes to soften a little.
