BISCOTTI REGINA o REGINELLE PALERMITANE - biscotti da inzuppo
I biscotti regina o reginelle palermitane, sono un tipico dolce secco italiano, originario della Sicilia. Le reginelle si presentano in forma rotonda o leggermente allungata con una superficie croccante e dorata, caratterizzati dalla presenza di semi di sesamo sulla superficie. La consistenza croccante dei biscotti regina si ottiene grazie alla presenza dello strutto. Solitamente i biscotti Regina sono serviti come snack oppure, essendo considerati anche come biscotti da inzuppo, vengono serviti da accompagnamento a bevande calde come il te, latte o caffè. Le reginelle palermitane, essendo un dolce tipico della tradizione italiana, spesso si trovano anche in pasticcerie e negozi di dolci di tutta Italia o quasi.
Ingredienti
- 260g farina 00
- 80g strutto
- 80g zucchero
- 3g ammoniaca per dolci
- 1 uovo
- 25g latte
- 1 bustina di vanillina
- Un pizzico di sale
- Sesamo q.b

Homemade Sicilian S Cookies Recipe
Bring my Sicilian grandma right to your kitchen with this generations old easy to make S cookie recipe that is guaranteed to produce smiles!
If you’ve ever been to an Italian or Sicilian get together, no matter if it’s a holiday or just a back-yard party, you will inevitably be exposed to S cookies in some fashion. They are as classic as it gets in the world of Italian cookies, probably because they’re so easy to make.
Ingredients for this recipe:
For the Cookies:
• 4 cups all-purpose flour
• 1 1/3 cup sugar
• 2 tablespoons baking powder
• 2 ½ sticks softened unsalted butter
• 2 eggs
• 2 egg yolks
• 1 tablespoon vanilla extract
• water
For the Glaze:
• 1 cup powdered sugar
• 2 tablespoons whole milk
Makes 50 cookies
Prep Time: 30 minutes
Cook Time: 10 minutes
Cooling Time: 20 minutes
Procedures:
1. Preheat the oven to 350°.
2. Add the flour, sugar, and baking powder to a large bowl and using a pastry knife cut in the butter until the mixture becomes like a meal or is very small like cous cous. Set aside.
3. In a separate bowl whisk together the eggs and vanilla until completely combined.
4. Transfer the dry ingredients to a clean surface and form a well in the center. Pour the wet ingredients to the center of the well and knead the dough for 4-5 minutes or until it forms a smooth cookie dough.
5. If the dough is dry add 1 tablespoons of cold water at a time while kneading until the dough is soft. Do not add too much or the dough will become too wet and sticky.
6. Add the dough to a bowl and chill in the refrigerator for 20 minutes.
7. Take the dough out and take about 2 tablespoons of dough and roll it out on a clean surface until it’s about a ½” to ¾” in diameter and 5”-6” in length.
8. Curl up each end to the center to form an S shape and then add to a cookie sheet tray lined with parchment paper about 2” apart from one another. Use the dough until it is all gone.
9. Bake the cookies on the bottom rack of an oven for 350° for 5 minutes and then the top rack at 350° for 5 minutes or until very lightly browned around the bottom edges.
10. Cool completely.
11. While the cookies are cooling whisk together powdered sugar and milk in a small bowl until combined then dip the top part of the s cookie in the glaze and set on a rack until the glaze has formed to the cookie. You can also brush the glaze on if you’d like.
Chef Notes:
Make-Ahead: You can make these up to 2-3 days ahead of time.
How to Store: Keep these in plastic bags at room temperature for up to 6 days or in the refrigerator for up to 8 days. These freeze extremely well in plastic bags for up to 3 months. Thaw at room temperature and serve.
Be sure the butter is softened before trying to cut it into the dry ingredients.
My Aunt Pam swears that if you use ½ Blue Bonnet margarine, the cookies will taste better. I used all unsalted butter, but it’s up to you.
If butter is too expensive you can use 100% margarine, which is what my grandma did.
My family also adds up to 4 tablespoons of vanilla, but that’s too much for me.
To fast track this recipe cut the butter into the dry ingredients in a food processor and then transfer to a stand mixer with the hook attachment and knead in the wet ingredients.

BISCOTI REGINA
These are a delicious Sicilian cookie, widely available in industrially-made versions. I assume that the regina (queen) in question is Margherita di Savoia, the second and much beloved queen of a united Italy. Pizza Margherita was also named in her honor. Queen Margherita loved sweets and would often go personally to visit pastry shops with her ladies in waiting. She was known to spontaneously ennoble the owner of a pastry shop where she really liked the cookies, elevating him to the rank of cavaliere (knight)!
Biscotti regina are an example of an Italian cookie which is not sliced and re baked, since biscotti in Italian just means cookies.
Makes about 40 cookies
3 1/4 cups all-purpose flour (spoon flour into dry-measure cup and level off)
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
12 tablespoons (1 1/2 sticks) unsalted butter, cold, cut into 12 pieces
3 large eggs
2 teaspoons vanilla extract
Egg wash: 2 large eggs well beaten with a pinch of salt
2 cups untoasted sesame seeds
2 cookie sheets or jellyroll pans covered with parchment or foil
1. Set racks in the upper and lower thirds of the oven and preheat to 325 degrees.
2. Combine the flour, sugar, baking powder and salt in the bowl of a food processor fitted with the metal blade. Pulse several times to mix.
3. Add the butter and pulse repeatedly until the butter is finely mixed in, but the mixture is still cool and powdery.
4. Add the eggs and vanilla and pulse repeatedly until the dough forms a ball.
5. Invert the bowl to a floured work surface and carefully remove the blade. Briefly knead the dough 2 or 3 times to make it smooth. Shape the dough into a rough cylinder.
6. Use a bench scraper or knife to divide the dough into 8 equal pieces.
7. Roll one piece of dough into a rope about 15 inches long. Cut the dough into 3-inch lengths.
8. Repeat with the remaining pieces of dough, lining up the little cylinders of dough on the left side of your work surface.
9. After all the cookies have been formed, place the egg wash and sesame seeds, each in a shallow bowl next to the cookies, and place the baking pans to their right.
10. Drop one of the cookies into the egg wash and use a fork to turn it over so that it is completely covered. Use the fork to lift it out of the egg wash, letting the excess drip off over the bowl and place it on the sesame seeds. Use a second fork to roll the cookie around in the sesame seeds to cover it completely. Use the fork to transfer the coated cookie to one of the prepared pans, lining up the cookies so that they are about 1 1/2 inches apart all around.
11. Repeat with the remaining cookies.
12. Bake the cookies until they are risen, firm, and the sesame seeds are golden, about 30 minutes.
13. After the first 15 minutes, place the pan from the lower rack on the upper one and vice versa, turning the pans back to front at the same time. If you know that your oven gives strong bottom heat, bake the pan on the lower rack stacked on a second one for insulation. Slide the papers off the pans to cool the cookies.
Storage: Keep the cookies between sheets of wax paper in a tin or plastic container with a tight-fitting cover.
