There’s something extra decadent with the combination of raspberries and white chocolate in a dessert, especially when we add the pièce de résistance – a hint of almond essence!
With the bursts of red in each muffin, these look divine on a platter ready to entertain guests for birthdays, dinner parties or BBQs. Slice them in half and sprinkle with icing sugar to make them nice and bite size for everyone.

1 cup self raising flour heaped / 150 g / 5.29 oz
¾ cup white sugar / 125 g / 4.4 oz
1 egg 59 g / 2.08 oz, extra large
½ tsp almond essence
½ cup milk / 125 ml / 4.22 oz
2 tbsp butter softened / 25 g / 0.88 oz
⅓ cup raspberries fresh or frozen / 75 g / 2.64 oz
¼ cup white choc chips / 30 g / 1 oz

00:05 Mix self raising flour and sugar in a bowl.
00:14 Crack in egg, add the almond extract and mix.
00:24 Add the butter and milk, mix well.

Perfect Vanilla Cupcakes/How to make moist vanilla cupcakes/ Classic cupcakes
Vanilla cupcakes are so delicious.This is an easy and no fail recipe for the best moist vanilla cupcakes.
Ingredients:
Sugar- 1 Cup(200g) -
Unsalted Butter- 1/2 cup (125 g)
All Purpose flour- 1&1/2 cups (190 g)
Baking soda- 1/2 teaspoon
Baking Powder-1 teaspoon
Salt- 1/4 teaspoon
Egg- 2 Large
Milk-3/4 cup( 185 ml)
Vanilla Essence-1& 1/2 teaspoon
Number of cupcakes:
This recipe makes 18 -20standard cupcakes.
Note:
1. Powdering the sugar will make the creaming easy.
2. Butter can be replaced with 1/2 cup vegetable oil.
Bake it in a preheated ( preheat for 10 minutes) oven at 180 C for about 20-25 minutes.

Blueberry Muffins | Freshly Picked Local Florida Berries | Simple Snack, Treat, Breakfast | GemFOX
1 C flour
1 t baking powder
1/4 t salt
1/4 C sugar
1 egg
3 T melted butter
1/2 C milk
6-10 blueberries per muffin
350F for 20-25min
Substitutes: oil for butter; yogurt or buttermilk for milk. I also sometimes add a little lemon juice and/or zest to blueberry muffins.

Blueberry & Raspberry Muffin: (Makes 11-12 regular size muffins)
192 gm flour ( 1 1/2 cups)
150 gm sugar (3/4 + extra for muffin top)
1/2 teaspoon salt
1 egg
2 teaspoons baking powder
78 ml vegetable oil (1/3 cup)
125 ml milk (1/2 cup)
1 1/2 teaspoons vanilla sugar /extract
100 gm blueberries (1 cup)
100 gm raspberries ( 1 cup)
Preheat oven 200 C/400 F & Bake for 17-20 mins (until a toothpick insert comes out clean)

Eggless Blueberry Lemon Cake | Amazing Crumb Cake Recipe | Dessert recipes easy at home | Cake
Lemon Blueberry Cake is a popular cake kept at many cafes. I have given it Crumble texture and made this. You can bake it without oven as well. & you can also skip BlueBerry if you want to. Enjoy with coffee, tea or just like a dessert. Can even carry in tiffin or while travelling.
Ingredients :
1 tbs Butter
2 tbs + 180 gm Plain Flour
1 tbs + 3/4 cup Powdered Sugar
1 Lemon Zest
1 tbs Lemon Juice
1/4 cup Oil (odourless)
Approximately 100-120 gm Blueberries
1 tsp Baking Powder
1 tsp Baking Soda
Method :
In a mixing bowl, take 1 tbs Butter
Add 2 tbs Plain Flour (alternatively oats can be used)
Add 1 tbs Powdered Sugar and mix with a spoon to get sand like texture
Refrigerate this crumb mixture
Take another mixing bowl, add 1 tbs Powdered Sugar (out of 3/4 cup sugar)
Add 1 Lemon Zest (make sure you shred lemon only till yellow portion)
Add 1 cup Milk (with room temperature)
Add 1 tbs Lemon Juice (to curdle milk)
Add remaining Powdered Sugar (out of 3/4 cup)
Add 1/4 cup Oil (odourless)
Whisk well all wet ingredients
Further take approxim 100-120 gm Blueberries
Add 1 tbs Plain Flour (out of 180 gm plain flour)
Mix it and keep aside
Take remaining flour in a bowl
Add 1 tsp Baking Powder
Add 1 tsp Baking Soda
Mix well and add it to the wet mixture
Add Blueberries and mix well
Further take a lined baking loaf
Pour the batter and drizzle crumb mixture on top
Pre heat the steamer on slow to medium heat along with a stand in it
Place cake loaf in it and cover with a lid
Bake the cake for 50-55 mins
(You can bake it in 10 min pre heated oven at 180⁰ for 35 min in the middle rack)
Let the cake cool down
Un-mould the cake and cut it into pieces
