(approximately 2 lbs 1 1/2 Teaspoons Salt 1/4 Teaspoon Pepper 3 Tablespoons Lemon Juice 3 Tablespoons Olive Oil 1 Large Bermuda Onion :
sliced Rinse and dry salmon with a paper towel. Season with salt and pepper and sprinkle with lemon juice and olive oil. Spread onion slices over salmon and let stand 1 hour. Discard onion. Arrange in broiling pan. Broil 3" from source of heat, turning once, until browned on both sides. Serves 4.

Smoked Salmon & Spuds
Chiko's Smokey Rub: Bermuda Fish
Ingredients:
Any fillet or whole of fresh Bermuda fish (Chef Chiko used Red Hind in this demo)
Onion, chopped
Red, green, or yellow peppers
Any flavor of Chiko’s Smokey Rub you prefer: Original, Triple Garlic Fusion, Spicy Fusion, Ham Seasoning, Middle Eastern Spice, Salt Fusion. (Chef Chiko used Original flavour in this demo)
Butter, melted
Fennel
Fresh rosemary
Himalayan pink salt, parsley, and any other seasonings you want to add.
Directions:
Place fish on a piece of foil that’s big enough to close
Gently rub melted butter on fillet
Generously rub fillet with Chiko’s Smokey Rub
Add fennel, onion, peppers, and rosemary on top or cut open and place in stomach cavity of the fish.
Cover with foil and bake at 400 degrees until fish is cooked thoroughly. Enjoy!
