Bermuda Fish Chowder Recipe & My New Favorite Cooking Tomato - Oxheart!
Over the summer, I had an abundant harvest of wonderful tomatoes and I grew to LOVE a new one for cooking. I thought this tomato based chowder would be a great way to use many garden ingredients and it certainly was because I was able to freeze some to enjoy later this fall.

I used this recipe as a general guide when creating this chowder. One of the main differences is I used warm spices like Allspice and cloves plus Worcestershire sauce instead of the dried and fresh herbs you will note in the recipe:

The baked spiny lobsters at Bermuda’s Lost In The Triangle are about as fresh as it gets. Restaurant owner and fisherman Delvin Bean catches the prized crustaceans and brings them to chef Anthony Gomez, who bakes them to perfection. On day two of vlogger Byron Talbott’s adventure in Bermuda, he gets a real taste of the island’s local flavours.
They start the day off with breakfast at a local favorite, farm-to-table eater called Tribe Road Kitchen. “The chefs here have a serious, but little bit whimsical approach that I enjoyed quite a bit,” Byron says, singling out the South Indian Breakfast dish for high praise. “Everything I had here was off-the-charts amazing.” Next up, he heads to Masterworks Museum, Bermuda’s premier art museum, highlighting island artists both new and old. Artists such as Georgia O’Keeffe, Charles Demuth, Jack Bush and Albert Giles are all featured in the museum. Bermuda’s British culture plays a big part in Byron and his wife’s next stop – high tea at the Bermuda Perfumery. They learned about some of the materials and methods that go into making perfume before enjoying teas, jams, butter, honey and some delicious scones and tea cakes. With time for one more culinary adventure, the couple enjoyed a dinner at Four Ways Inn in the Royal Palms Resort, one of the island’s most acclaimed restaurants. After scoping out the extensive wine cellar, they had a perfectly prepared dinner with grilled spiny lobster, lobster bisque, pan fried veal cutlet and much more. The experience was just another reflection of the wonderful hospitality that Bermuda has to offer.
