The EASIEST Way To Make Tamales | RAJAS CON QUESO TAMALES
Hello my beautiful fam! Welcome back to my kitchen first of all I want to thank you for being part of our family, and allowing me to be part of yours!!!! today I’m going to share with you how to make the easiest and most delicious tamales de queso con Rajas! My Favorite!! There is two ways we make them, one using chile poblano mix with a delicious spicy tomato salsa, and the other one with just pickled jalapeños (this is what we do when we make regular meat tamales and we have leftover masa????) both are super delicious and let’s not forget how easy they are to make, I prefer making this ones because we don’t have to wait hours for any meat ???? we know that’s what takes the most time while making tamales☺️ keep in mind like every recipe and every household there are tons of variations that make this delicious recipe, you can always adjust it to your taste, I really hope you enjoy it as much as me and my family do, and as always if you do please don’t forget to give me a big thumbs up, comment down below your thoughts and if you new to my channel please hit that subscribe buttons so you can be part of our family!!!!!!

What can go wrong???
Not soaking the corn husks long enough can cause the masa not to stick, soak for at least 2 hours ????
Spreading the masa on the rough side of the corn husk can cause for your masa to stick and makes it difficult to remove from the corn husk make sure you spread on soft side ????
Not adding enough liquid can cause your masa to not spread easily, test your masa by adding a little ball to glass of water, if masa floats, then it’s ready to be used!!!
‼️‼️Tip!!! Make sure your masa sets before eating ????
Ingredients: depending on how much masa and filling you use for each tamal, it will depend on how many tamales you get, I got around 35 tamales ????
6 cups Maseca for tamal
1 1/2 cup lard or vegetable shortening
2 tsp baking powder
2 tsp salt
4 cup chicken broth/ water
3/4- 1 cup jalapeños juice
16 oz corn husks
Filling:
Pickled jalapeños
30 oz cheese, I used Oaxaca, Monterey Jack is another one I like to use ????
8 poblano peppers
2 large tomatoes
2 Roma tomatoes
4 serrano peppers
1/2 onion sliced
2 garlic cloves
1/4 cumin
1 tbsp bouillon

Ingredients
4-6 Roasted Poblano peppers (Dark Green Chile)
1/4 Onion
1 Can Media Crema Nestle (Table Cream) It's Low Carb Friends
1/2-3/4 Oaxaca Cheese
1 Tbs Butter or Margarine
Pepper to Taste
1 A teaspoon of Secret Ingredient or Salt to taste
Crema Nestle Alternative
*3/4 Cup Heavy Whipping Cream
* 3/4 Half and Half
* Crema Fresca
Cheese Alternative
*Mozzarella
*Mexican Cheese Blend
*Pepper Jack (I know how much some of you love a good kick)
Tips for my KETO Friends
1 Poblano Pepper has 9g Of Carbs - 3.7 G of dietary fibers =5.3Grams of carbs
Crema Nestle 1 Tablespoon (20 ML) has 0.8g Carbs

Strips of zesty poblano peppers simmered in a cheesy cream sauce make rajas con crema perfect for parties and weekly taco nights alike.

Ingredients
6 fresh poblano chiles
2 tbsp butter
1 medium white onion, cut lengthwise 1/4 slices
2 garlic cloves, minced
8 oz corn kernels
1 tsp kosher salt
1/2 tsp black pepper
1/8 tsp ground cumin
4 oz cream cheese
1 cup Mexcian crema (or sour cream, crème fraîche)
1 cup Oaxacan cheese, grated (See Note 1)
Instructions
Roast Chiles
Either roast and char the chiles over an open flame (stovetop), under the broiler, or on a BBQ grill.
Roast the poblanos on stove top flame until skins are charred and blistered, about 10 minutes. Alternatively, you can place them on a baking sheet and under the broiler until the skins blacken and blister. Lastly, you can place them on a hot BBQ grill and cook until the skins blacken and blister.
Transfer the poblanos into a bowl and cover with towel or sealed brown bag to steam. Peel the charred skin from the roasted poblano peppers and slice them into 1 inch strips.
In a saucepan or skillet, melt the butter and saute onions over medium high heat until softened. Add the garlic, roasted poblano strips, corn, salt, pepper and cumin. Cook for 2 minutes stirring often.
Lower heat to medium, add the cream cheese and Mexican crema. Mix well and cook for about 5 minutes or until the cream starts to bubble.
Ad the shredded cheese and cover the pot and turn off the heat. Let it sit covered until the cheese has melted. Serve immediately with warm tortillas, tortilla chips or as a side (See Note 2).
Notes
1. Substitute cheeses could be Monterrey Jack, Chihuahua or Mozzarella.
2. I also have added shredded chicken to make it a main course.

2 1/2 lbs poblano peppers, charred, peeled & sliced
10 ea serrano peppers (optional), quartered lengthwise
2 -2 1/2 lbs Oaxaca cheese, grated :
33-34 ea corn husks for the tamales :
12 ea additional corn husk to cover the tamales
For the Dough
10 cups corn masa harina
*** Maseca instant corn masa:

1 1/2 tsp baking powder :
1 TBSP kosher salt or to taste :
2 1/3 cups avocado or corn oil :
7 cups chicken broth, low sodium :

Sour cream, cheese and avocado salsa
For the avocado salsa

1 small garlic, clove + 1 regular size
1/4 bunch cilantro, fresh
1 avocado, large (about 9 oz)
