Ingredients:
1 lb ground beef
1 pcs, 5½ oz large yellow onion, diced
2 tsp garlic powder
8 oz tomato sauce
1 cup cooked brown rice
1 cup chicken broth
1 cup sour cream
2 cups mozzarella cheese, shredded & divided
3 tbsp olive oil
Salt & ground black pepper to taste
To serve:
Mixed vegetables (corn kernels, green peas, & carrots), cooked to your preference
⬇️ How to make Hearty Ground Beef and Rice Casserole⬇️
0:08 Preheat your oven to 350 degrees F. While your oven warms up, grease a 9x13-inch baking dish.
0:14 Heat up oil over a large skillet then add & saute onions briefly.
0:26 Add the ground beef to the skillet and saute for roughly 7 minutes until the beef is well browned. Drain any excess oil.
0:39 Lower the heat to medium then mix in the rice, tomato sauce, broth, one cup of cheese, & garlic powder.
1:00 Stir the ingredients until they are well blended and simmer them for 3 minutes.
1:04 Season with salt & pepper to taste and adjust accordingly.
1:13 Transfer the mixture onto the prepared baking dish and bake it in the oven for 15 minutes.
1:23 While waiting for the casserole to finish baking, combine the remaining 1 cup of mozzarella cheese and sour cream in a small mixing bowl.
1:39 After 15 minutes, spread the cheese mixture over the casserole and bake it for an additional 15 minutes.
2:00 Once your casserole is done baking, allow it to cool briefly then serve it with roughly 1 tablespoon mixed vegetables.

Mexican Beef & Rice Casserole
1 Tbsp Olive Oil
1 1/2 lbs Ground Beef
1 Medium Onion - diced
3 - 4 Cloves Garlic - minced
1/3 C Taco Seasoning
1 Tbsp Tomato Paste
1 10 oz Can Rotel - Tomato & Green Chili's
1 C Fire Roasted Tomatoes
1 C Frozen Corn
1 15 oz Black Beans - drained & rinsed
1 Lime - juiced
Salt & Pepper to taste
1 1/2 C Rice
2 C Chicken Broth
2 C Cheddar/Monterey Jack Cheese - shredded
Garnish with
Scallions - Chopped Roma Tomatoes - Cilantro
In a large skillet drizzle olive oil, add onions cooking 2 - 3 minutes, add garlic cooking until fragrant.
Add chop meat and brown until no longer pink. Drain fat is needed.
Stir in taco seasoning until well blended, add tomato paste, rotel, fire roasted tomatoes, corn, black beans, salt & pepper & lime juice. Stir until all incorporated. Add chicken broth and rice. Cover and lower heat. Simmer for 20 - 25 minutes or until rice is tender.
Top with shredded cheese, cover and cook until cheese is melted.
Garnish with scallions, roma tomatoes & cilantro

Mexican Beef and Rice Casserole
Ingredients
⦁ 1 Tablespoon oil
⦁ 1/2 onion , chopped
⦁ 1 green bell pepper , chopped
⦁ 2 cloves garlic , minced
⦁ 1 pound ground beef
⦁ salt and pepper (to taste)
⦁ 3 Tablespoons taco seasoning (either 1 store-bought packet or homemade)
⦁ 1-1/2 cups red salsa
⦁ 2 Tablespoons tomato paste
⦁ 1 cup ⦁ corn , drained
⦁ 1 (16-ounce) can black beans , drained
⦁ 1 (4-ounce) can green chilies
⦁ 1 cup ⦁ long grain white rice (uncooked)
⦁ 2 cups ⦁ beef broth
⦁ 2 cups shredded Mexican Blend Cheese (Cheddar, Monterrey Jack)
Instructions
0. In a large skillet, over medium heat, cook the chopped onion, and bell pepper in oil for about 5 minutes or until the onion and bell pepper are softened.
1. Add the minced garlic and cook for about 1 minute stirring frequently to prevent the garlic from burning.
2. Add the ground beef and cook for another 5 minutes. After the ground beef is cooked, drain the extra grease.
3. Sprinkle taco seasoning over the cooked ground beef and stir until the ground beef is covered with the taco seasoning.
4. After the ground beef is seasoned and cooked, add the drained corn, black beans, salsa, tomato paste, and green chilies and stir until all ingredients are evenly distributed throughout the dish.
5. Add the uncooked rice and beef broth.
6. Cover and bring the rice mixture to a boil and then reduce the heat to low and simmer for about 18 to 22 minutes until rice is done.
7. Sprinkle shredded Mexican Cheese over the casserole. Cover for about 3 to 5 minutes to allow the cheese to melt.
8. Garnish with chopped tomatoes, green onions, or cilantro. Serve hot!
