Chicken and Rice Casserole Our Favorite Recipe
Chicken and Rice Casserole Ingredients: 3 chicken breast cooked and cubed 2 cups chicken broth 2 cup instant rice 2 can cream of chicken soup (10 oz) 1 can cream of mushroom soup (10 oz) 1 cup shredded cheddar cheese Salt and Pepper to taste ½ tsp poultry seasoning 1 sleeve Ritz crackers crumbled
Directions: Add Ritz crackers to the bottom of a 9x13 greased casserole dish Mix chicken, chicken broth, rice, cream of chicken, cream of mushroom, ½ of the cheddar cheese, salt, pepper and poultry seasoning in a bowl Spread mixture in the casserole dish Bake at 325 to 350 degrees for 30 to 40 minutes until bubbly Sprinkle the rest of the cheddar cheese on during the last ten minutes of cooking. (optional sprinkle some parsley on also) Serve and Enjoy !!!

Ingredients: Sauce mixture 4 tablespoons butter ½ cup chopped celery 2 teaspoons dried minced onions 3 tablespoons flour ⅛ teaspoon black pepper ½ teaspoon dry mustard ½ teaspoon Worcestershire sauce 2 cups milk 1 cup shredded cheddar cheese
Ingredients: Casserole mixture One 9 oz can tuna, drained 1 ½ cups frozen peas 2 tablespoons diced pimento Salt to taste 3 cups cooked rice 1 cup French Fried Onions
Directions: Cheese sauce mixture
Use a large sauce pan to sautéed celery in butter until tender, about 5 minutes. Add dried onions, dry mustard, pepper and flour. Mix and cook until smooth. Stir and cook until bubbly, then add Worcestershire sauce and gradually add milk, stirring to keep smooth. Cook until mixture thickens. Add 1 cup shredded cheese and stir till smooth. Remove from stove top. Stir in peas, tuna and pimento. Set aside
Directions: Casserole
Butter a 2-quart casserole dish. Spread half of the cooked rice into dish. Top with ½ cup shredded cheese. Cover with half cheese sauce mixture. Repeat layer of rice, shredded cheese and cheese sauce. Top with French Fried onions.
Bake in 400F oven for 20 minutes or until brown on top and cheese sauce is bubbly.
