Today on Cooking the Books, I'll be preparing a retro breakfast dish - Gold Rush Brunch.

I'm so happy to share my love of mid-century cooking and old recipe books with others. I'll be cooking vintage recipes, sharing cookbook reviews, and even showing off my latest vintage cookbook haul every now and again. I'm cooking through history and you're invited!

GOLD RUSH BRUNCH
1 pkg dehydrated hash brown potatoes
1/2c chopped onion
2T chopped parsley
1/4c butter
1/2c flour
1t salt
1/4t pepper
1.5c milk
1c sour cream
1 to 1.5lbs sliced Canadian style bacon
8 eggs
Preheat oven to 350. Prepare potatoes according to package directions; drain well. Stir in onion and parsley. Place in a well greased 13x9 inch baking dish. Melt butter in saucepan; blend in flour, salt and pepper. Add milk. Cook over low heat, stirring constantly, until thickened. Remove from heat; blend in sour cream. Pour over potatoes, lifting potatoes lightly to permit sauce to mix well. Arrange bacon in an overlapping row down center of dish. Bake for 45 minutes. Remove from oven. Make 4 indentations on each side of bacon; slip 1 egg carefully into each indentation. Season with salt and pepper as desired. Bake 20 minutes longer until eggs are set.

Roasted Red Pepper Salad with Anchovy White Beans - Eat Clean with Shira Bocar
This fresh spring salad delivers a fantastic flavor and is also great for you! Although we love our greens, in this salad they are more of an accent to the tender white beans and sweet, meaty roasted red peppers. The anchovies add a satisfyingly salty and savory zing and are packed full of omega-3 fatty acids. And, unlike other fish, anchovies are not over fished and are notably low in mercury and other toxins.

Shop at Cabela's Making Dr. Pepper Chicken in the can cook is so easy and taste so great. I have not yet found a dish that I did not care for that I have cooked in this can cooker. It is easy to use easy top clean and cooks with great flavor. This is a recipe I use all the time on my Dutch oven, but I dont always need enough to cook in the Seth McGinn's Can Cooker. Now the do have a junior model that is more family sized. Maybe I should get one of those. Down below I will put a link to purchase a can cooker and I will put the Dr. Pepper chicken recipe.

Recipe
4 Chickens, cut into 10 pieces each
6 cups Dr Pepper
3 cups Ketchup
4 Onions quartered
3lbs Carrots, rough chop
6lbs Red potatoes, I had 3 red and 3 golden cut up in 8ths
6tbl Chili powder
4tbl Salt
2tbl Garlic powder
1. Add vegetables to can cooker
2. Add chicken
3. Add Seasonings
4. Add Ketchup
5. Add Dr. Pepper
6. Close CanCooker
7. Heat to where the cancooker starts to steam in 15 minutes.
8. Cook for 1 hour while steaming entire time.
