Burrito Casserole Recipe
Cheesy Burrito Casserole
Burritos “lasagna style.”
Ingredients:
1 10.5 oz can condensed cream of celery soup
1 cup milk
8 oz shredded cheddar cheese
8 oz shredded mozzarella cheese
2 4oz cans diced green chilies
1-pound ground sausage
½ pound ground beef
1 medium onion, chopped
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon pepper
½ teaspoon oregano
1 tsp ground cumin
1 10-oz package flour tortillas (each cut into 8 strips)
Preheat oven to 350 degrees F. Coat 13x9 inch pan with non-stick cooking spray.
In medium saucepan combine soup, milk and half the cheddar cheese. Cook and stir over medium heat-high heat 3 – 4 minutes until cheese is melted. Stir in green chilies. Remove from heat.
In a large skillet, cook ground beef and onion over medium-high heat 8 – 10 minutes, until browned, stir to break up meat into crumbles. Stir in garlic, salt, pepper, cumin and oregano. Cook 1 minute.
Place a layer of tortilla strips in prepared baking dish. Top with half of the meat mixture, then half of the soup mixture. Repeat layers. Top with remaining shredded cheeses. Bake 30 minutes or until heated through and edges are bubbly. Let stand 10 minutes before serving.

bake time: 15 to 20 minutes
The recipe will fill one dozen burritos
Ingredients
Oil
12 flour tortillas
Filling
2 shredded chicken breast
1 cup cooked potatoes
1/2 chopped white onion
3 garlic cloves
1 1/2 cups mix veggies
1 Tbs butter
1/2 Tbs ground cumin
1/2 Tbs chicken bouillon
1 Tsp Black pepper
Creamy Sauce
1 Tbs butter
3 cups shredded medium cheddar cheese
2 cups heavy whipping cream
1 cup warm water
1 can hatch chiles
1/2 Tbs chicken bouillon
*can of cream of chicken also taste great in this combo
Topping
1 cup mozzarella cheese
1/2 cup Mexican cheese blend
One dozen flour tortillas in 30 minutes-
1 dozen tortillas made by hand
5 dozen flour tortillas made by hand from scratch
Spinach Tortillas made by hand

Beef: 1.5 LB. BROWNED GROUND CHUCK (DRAIN BEEF)
ADD:
1 CUP HERDEZ SALSA (MEDIUM HEAT)
1 TSP. CHILI POWDER 1/4 TSP. CUMIN
1 TSP. SALT
1/4 TSP PEPPER
Cheese Sauce:
Combine:
2 CUPS SHREDDED MEXICAN BLEND CHEESE,
3/4 CUP HALF AND HALF,
1/4 CUP WATER.
Microwave on 1-minute intervals mixing with fork until creamy.
Put in liquid measuring cup for easy pour.
Onion & Peppers:
SLICE WHOLE ONION IN THIN SLICES,
SLICE WHOLE BELL PEPPER IN SLICES,
Sauté in 3 tbsp. olive oil on low heat for 10-
12 minutes. Salt and Pepper.
Beans:
2-3 CANS OF RED KIDNEY BEANS-
Put in skillet - warm. Add
2 TSP. ONION POWDER ,
1 TSP. GARLIC POWDER.
Mash with potato masher. Salt only if needed taste!
Spray 13x9 pan with cooking oil.
Layer your burritos as desired. Lay in a row along
pan. Top with salsa, sauces of your choice, and cheese
sauce. Sprinkle with shredded cheese. Bake until hot
and bubbly. Remove and plate with chopped lettuce,
tomato, sour cream, garnish with beef and onion and

Easy Creamy Burrito Casserole | Simple Crockpot Meal
Creamy Burrito Casserole
Ingredients
1 lb ground beef
1/2 onion, chopped
1 package taco seasoning
6 large flour tortillas
1 can refried beans
2 -3 cups shredded taco cheese or cheddar cheese
1 can cream of mushroom/or chicken soup
4 ounces sour cream
Directions
Brown beef and onion; drain.
Add taco seasoning and stir in refried beans.
Mix soup and sour cream in a separate bowl.
Spread 1/2 sour cream mixture in the bottom of a casserole dish.
Tear up 3 tortillas and spread over sour cream mixture.
Put 1/2 the meat bean mixture over that.
Add a layer of cheese.
Repeat the layers.
Sprinkle cheese over the top and bake
slow cook on low 4-6 hrs or
in oven at 350°F for 20-30 minutes.

You will need:
500 grams of minced beef (1 lbs)
1 onion
Salt, pepper and oil
140 grams of tomato paste (5 oz)
1 package of taco seasoning
240 grams of kidney beans (drained weight) (8.4 oz)
285 grams of corn (drained weight) (10 oz)
200-250 ml of water (about 1 cup)
9 tortillas
500 ml of mornay sauce (2 cups)
250 ml of sour cream (1 cup)
200 grams of cheddar cheese in total (7 oz)
160 degrees C convection or 320 degrees F convection
