Caramelized vegetable cheese spread
Cheese and caramelized vegetable spread Cook time: 1 hour Servings: approximately 8
Ingredients: 2 8 oz packages cream cheese (cubed) 7 oz extra sharp cheddar (cubed) 1 red bell pepper (chopped) 2 ribs of celery (chopped) 1/2 of a large onion (chopped) 1 medium carrot (chopped) 1 parsley root (chopped) 1 small head of garlic (peeled) 1 tsp salt 1 tbsp mixed peppercorns (ground) 1 tbsp all purpose seasoning (bay leaf/thyme) Olive oil for sautéing
Directions: 1. Sauté the vegetables with the salt until well caramelized, about 15-20 minutes. Add in the spices, and sauté until fragrant, then set aside to cool completely. 2. In a food processor combine the cheeses with the vegetables, and blend until fully incorporated. Serve chilled with either crackers, chips, toasts, raw veg, or your preferred accompaniment.
